One of my most favorite companies, OXO , does great things in my kitchen, they are also doing great things for Cookies for Kids’ Cancer — a cause founded by two OXO employees who were inspired by their 2-year old son’s battle with cancer. Cookies for Kids’ Cancer supports people everywhere to help fight pediatric cancer – through the simple concept of local bake sales.

OXO will donates up to $100,000 each year to Cookies for Kids’ Cancer to support research for new and improved therapies. They do this through various fundraising efforts of their own, such as donating $100 on behalf of bloggers, like myself, who are willing to share a cookie recipe post. For me, it’s the least I could do — and I’m honored to help in this small way.

One of the items I was sent was the OXO Good Grips Cookie Press with Disk Storage Case  — I was beyond excited for this.  I’ve wanted one for a long time, especially to use during Christmas baking, but never bought one. This is one of the most fun baking tools to use. I thought it would be hard to use, but it was so easy. My kids loved using it too.

Inside the cookie press package was disk storage case with multiple different shapes that you can use to make a variety of cookies. I loved that they had the storage case — I would surely lose those disks if it didn’t come with one.

While I like the disks that come with the Cookie Press, I was wanting to make some Halloween cookies. After a quick search on Amazon, I saw this wonderful  OXO Good Grips Cookie Press Autumn Disk Set ! I bought them right away and as soon as they arrived I realized how perfect the spiderweb shape would be for little sandwich cookies. I got busy with my Halloween treats and have been really pleased with the results — and I think you will too.

To make your own Spiderweb Sandwich Cookies, you’ll need the  OXO Cookie Press  and the spider disk from the OXO Autumn Disk Set . You’ll also create a Chocolate Shortbread Cookies recipe. I used the exact one that  came in the little booklet inside the cookie press box (I’ve included the recipe at the end of this post). It’s easy to mix up and filling the cookie press with it is simple at well. As you can see, the dough is press out the bottom of the cookie press through the pattern, giving the dough it’s fun shape.

I decided to add a bit of white sprinkles to the top of my cookies and after baking for just 8 minutes, they were finished and ready to assemble into sandwich cookies.

The sandwich cookie filling is a deliciously sweet marshmallow buttercream. It’s also easy (seriously, will only take you a few minutes). You’ll mix up a batch and then add it to the bottom of one of the cookies. I did this by filling a pastry bag with the filling, but you could also spread it onto the cookie.

Top the filling with another cookie — with the two cookie bottoms facing each other.

So easy, but everyone will thing you spent forever making these Halloween treats. Now, you can do this same procedure (and recipes below) for other cookie press shapes, but I really like these spiderweb ones because the round shape makes them easier to fill.

Ingredients

Chocolate Shortbread

  • 1 1/2 cups unsalted butter ( 3 sticks, at room temperature)
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 large eggs (at room temperature)
  • 3 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • Sugar sprinkles (if desired)

Marshmallow Buttercream Filling

  • 1/2 cup unsalted butter ( 1 stick, at room temperature)
  • 2 cups powdered sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 7 ounces marshmallow cream

Instructions

To make marshmallow buttercream filling:

  1. Cream butter with mixer until fluffy. Cream together butter and powdered sugar, slowly adding sugar in several batches. Beat until sugar is fully incorporated into the butter. Add in salt and vanilla extract. Beat in marshmallow cream until well combined. Set aside.

To make chocolate shortbread cookies

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, cream together butter, sugar, and salt. Beat until light and fluffy. Add vanilla and eggs one at a time, continuously beating.
  3. Gradually add flour and cocoa powder, beating until well incorporated.
  4. Place dough in OXO Cookie Press with desired disk (spider disk in OXO Cookie Press Autumn Disk Set). Press dough out onto ungreased baking sheet. If desired, sprinkle with colored sugar sprinkles.
  5. Bake for 8-10 minutes or until the cookies are golden brown on the edges.

To assemble the sandwich cookies

  1. If desired, fill a pastry bag with tip with filling (filling can also be spread/spooned onto the cookies)
  2. Take one cookie and add add desired amount of filling on the bottom of the cookie
  3. Top filling with the bottom of another cookie, creating a “sandwich” (both cookie bottoms will be touching the filling and facing each other.
  4. Continue with remaining cookies.
