6 small navel oranges, peeled, pit removed, and cut into 3/8" slices 3 cups each arugula and radicchio leaves, or 6 cups of mixed greens
【オレンジの漬け汁】 1/2 cup orange juice 1/4 cup fresh lemon juice 2 Tbsp honey 2 cloves garlic, sliced 1 small fresh bay leaf
In a sauce pan, boil orange & lemon juices, honey, garlic, and bay leaf for 3 minutes. Let cool to room temperature; pour over orange slices arranged in a shallow pan. Cover and refrigerate 4 to 8 hours.
【ドレッシング】 3 Tbsp extra virgin olive oil 3 oz. feta cheese, crumbled or diced 1 Tbsp each capers and fresh chopped oregano Salt and pepper to taste
To serve, pour off marinade from oranges into bowl and discard bay leaf. Whisk in oil, then add cheese, capers, and oregano.
Place 1 cup greens on each plate, top with 5-6 orange slices. Top with marinade/dressing mixture. Garnish with nicoise olives (optional).
