* Sweet Potatoes and Marshmallows *
(from Penzeys Spices/Holiday 2005)
Serves 10-12
* 7lbs. sweet potatoes (about 6-8) * 5-6 tablespoons olive oil * 1/4 cup lime juice * 2 teaspoons cinnamon * 6 tablespoons butter * 1 tablespoon salt * 10oz. mini marshmallows
Lightly oil the sweet potatoes (use hands to coat them with oil), wrap individually in foil and bake for 1 1/2 hours at 425F. When they are cool and soft enough to handle, in a large bowl, scoop out the flesh and all the sticky goo from the foil, add the lime juice, cinnamon, butter and salt. Mash together and put into an oven-proof dish (*レシピには明記していませんでしたが写真は9x13インチのようでした). Top with marshmallows and bake in the oven at 425F for 15-20 minutes to brown the marshmallows.
