コレステロールは、 体内合成:食事=7:3 の割合と見積もられています(Absorption and metabolism of dietary cholesterol. Annu Rev Nutr. 1983;3:71–96)。
食事中のコレステロールが減少しても、コレステロール体内合成(De novo cholesterol synthesis)が脳、肝臓、腸管、性腺組織、皮膚などで高まるために、体内でコレステロールが不足することはありません(Dietary cholesterol and the risk of cardiovascular disease in patients: A review of the Harvard Egg Study and other data. Int. J. Clin. Pract. 2009;63:1–8.)。
脳にいたっては、全身のコレステロールの20%も含む最大のコレステロールリッチの組織であるに関わらず、食事中のコレステロールをそのまま利用することはなく、すべて脳内でコレステロールを自前で合成しています(Brain cholesterol: long secret life behind a barrier. Arterioscler Thromb Vasc Biol. 2004;24:806–815)(Cholesterol Metabolism in the Brain and Its Association with Parkinson’s Disease. Exp Neurobiol. 2019 Oct; 28(5): 554–567)。
リノレイン酸やDHAといったオメガ3も、この自前のコレステロール合成にリサイクルされています。
ところが、このコレステロールの体内合成を根本から止めてしまう毒物が存在します。

プーファの中でも、植物油脂(オメガ6、リノール酸)よりは、リノレイン酸(エゴマ、亜麻仁)の方が、コレステロール合成ブロック効果が高いことが示されています(Effects of dietary alpha- or gamma-linolenic acid on levels and fatty acid compositions of serum and hepatic lipids, and activity and mRNA abundance of 3-hydroxy-3-methylglutaryl CoA reductase in rats. これは、1800年以降に急増している心臓血管疾患の原因は、ココナッツ、バターやミルクに豊富に含まれている飽和脂肪酸の過剰摂取が原因で、穀物摂取の減少によるとしたものです(Dietary fat and its relation to heart attacks and strokes. Report by the Central Committee for Medical and Community Program of the American Heart Association. JAMA. 1961 Feb 4;175:389-91)。
米国循環器学会(AHA)は、ロックフェラーに追随して、飽和脂肪酸をプーファ(多価不飽和脂肪酸)に置き換えるように提言したのです(Dietary Fats and Cardiovascular Disease: A Presidential Advisory From the American Heart Association. Circulation. 2017 Jul 18;136(3):e1-e23)。
後に、この米国循環器学会(AHA)の提言は、ランダム化比較試験の臨床試験の結果とは相反するものであることが確認されるに至っています(Reduction in saturated fat intake for cardiovascular disease.
