苺のムースシャーベット



苺のムースシャーベット

子供の頃母がよく作ってくれたものです。
ムースというわりにはしっかりしてますが、苺の香りは抜群。
子供にうけますよ。

【材料】

2-3 cups fresh strawberries, purreed or crushed (for texture)
1 Tbsp lemon juice
1/4 tsp salt
6 Tbsp sugar

2 egg whites
1/2 cup sugar
1 cup heavy cream
2 Tbsp rum or red wine

【調理法】

1. Combine strawberries with lemon juice, salt, and sugar.
2. Beat egg whites well with 1/4 cup sugar until firm and fluffy.
3. Beat cream with 1/4 cup sugar until fluffy and creamy.
4. Add the egg whites little by little to the cream; mix well then fold in the strawberry mixture. Add the rum or red wine.
5. Pour into an 11x7 container and freeze for a couple hours.

TIP: I've skipped on the egg whites recently due to salmonella concerns, but I now believe the egg whites are necessary in keeping the smooth and airy texture. If concerned about food poisoning, I suggest using egg whites of now commercially available pasteurized eggs.
