This was another bottle of Chablis from Chablisot that I had just recently opened—fortunately, I had a second one in the cellar, so I decided to uncork it for my evening drink. While theoverall impression remained similar to last time, the way it evolved over time turned out to be quite different.
On the first day, it left the best impression. By the second day, it had started to fade a little, and by the third day, it was clearly off-balance.
Both bottles were part of the New Year’s lucky bag I bought from Ukiuki Wine, but I’m always puzzled by how much bottle variation there can be—even within the same purchase.
