Pumpkin Cheesecake


Ingredients:

16-oz. package pound cake mix
14-oz. can sweetened condensed milk
3 eggs
16-oz. can pumpkin (about 2 cups)
2 Tbsp. butter or margarine, melted
½ tsp. salt
4 tsp. pumpkin pie spice
8-oz. package cream cheese, softened
1 cup pecans or walnuts, chopped (for topping)

Instructions:

1. Preheat oven to 350 degrees.
2. In a large mixer bowl, combine cake mix, 1 egg, margarine or butter and 2 tsp. pumpkin pie spice.
3. Mix on low speed until kind of a crumbly texture.
4. Press onto bottom of 15 in-by-10-inch pan to make crust.
5. In large mixer bowl, beat cheese until fluffy.
6. Gradually beat in sweetened condensed milk, remaining 2 eggs, pumpkin, remaining pumpkin pie spice and salt.
7. Mix well.
8. Pour over crust.
9. Sprinkle with chopped nuts.
10. Bake 30 to 35 minutes or until set.
11. Cool. Chill. Cut into bars.
12. Store covered in refrigerator.
