What Makes This Recipe Great
The perfect watermelon: You’ll want to make sure that you choose a juicy watermelon for these fresh fruit popsicles. Start by looking for one that has a yellow spot on it. This indicates that the watermelon spent a good amount of time on the ground, and was allowed to fully ripen before being picked.
No added sugars: Because there is no added sugar in this recipe, it makes for a delicious treat for anyone that is following a low calorie diet.
Fresh Fruit Popsicles: You can easily use any other fresh fruit that you have to make all kinds of fresh fruit frozen treats. Just replace the watermelon and kiwi with strawberry, blueberries, bananas or anything else you like to try.
Ingredients
- Watermelon– You can use any kind of fresh watermelon that you’d like. However I find that a seedless watermelon is the best choice for this recipe. It saves so much time from having to pull out all of the seeds while you are cutting up the watermelon chunks.
- Kiwi– You’ll need to peel and chop up about five ripe kiwis for this recipe.
- Yogurt– Coconut yogurt is the idea choice for this recipe. It adds a nice creamy texture and provides just the right amount of sweetness. Make sure to choose a coconut yogurt that has zero added sugars.
Expert Tips
- If your popsicle molds don’t include a stick rack you can also use wooden sticks. Freeze for one hour and a half and then take them out of the freezer and stick wooden popsicle sticks in the watermelon popsicle. Put back the mold in the freezer and wait until the watermelon popsicle is completely frozen.
- To release the popsicles from their molds, dip the bottoms into a bowl of warm water first to loosen their hold. Avoid using hot water as that may cause the popsicles to melt.
Instructions
Step 1: Cube the melon and blend it in a high-powered blender or a food processor.
Step 2: Transfer the watermelon juice and puree mixture to the molds, leaving about an inch of space for the other layers, and freeze for 3 hours.
Step 3: Add a thin layer of coconut yogurt over the watermelon puree and put back the mold in the freezer and let it freeze for an hour and a half.
Step 4: Peel and cut the kiwi in cubes and blend it in a blender or a food processor.
Step 5:Take the popsicles out of the freezer and add the last layer over the coconut yogurt layer and put the molds back in the freezer and let it freeze for at least one hour and a half or until completely frozen.
Final Step: Your watermelon popsicles are ready when they are completely frozen! Enjoy!
It’s best to use BPA-Free popsicle molds for this recipe. You can find lots of them available on Amazon or at your local Walmart or Target stores.
Although frozen watermelon may not taste so great to eat after it has thawed, using it for a recipe like this one works pretty well. Once it has been blending into a puree it is almost the same as using fresh watermelon.
Combining watermelon and popsicles makes this recipe the ultimate summer treat !
