At EVO, Chef Peter De Ruvo presents some of the most creative plates in the entire state, where the focus is on everything made in-house. Some of his innovative dishes include the signature Squid Ink Chitarra which offers midnight black spaghetti tossed in Sea Urchin Butter and chunks of lump crab or the Lobster Risotto with Corn Asparagus. Antipasti, salads, pastas and pizzas are other items on the menu treated with the same amount of imagination. As a dessert, the Zeppolini (donuts) are enough of a reason to visit the restaurant alone.
