In 1956, Andy and his wife, Dilia, began making barbacoa in their home in San Antonio. He sold his first home-cooked barbacoa the way any up-and-coming San Antonio businessman would: from the back of his pickup truck. Before he knew it, he was delivering meat to restaurants and retailers throughout the San Antonio area, and his homestyle cooking made him a household name. Andy and Dilia’s dream was to make great tasting Mexican food quick and easy for everyone to enjoy without losing the authentic flavors, taste and aromas of “casa”. Through hard work and a dedication to their heritage recipes, the Garcias built the highly respected Texas icon known today as Andy Garcia Foods, “El Original de San Antonio.” Mexican recipes have always been about simple ingredients.
