Good, whole food is less expensive than pre-processed and packaged food. One of my earliest memories is watching my father boil down about ten pounds of raspberries to make a purée that he would drizzle on cold dessert plates for a wedding he was catering. I was struck by the amount of care that went into a detail so small, and, even then, I knew there were short cuts he could have taken that he wasn't taking. The truth is, art is in the details, in the care and preparation, and that is a belief I have embodied in my own cooking career. Cooking is a lot like playing music--I'm a pianist, too, and when I have cooked well there's a moment similar to when I have played well and I see the pleasure on people's faces. It makes the effort worth it. Much current catering seems to involve simply assembling pre-made food onto trays, but I started Moveable Feasts with a commitment to scratch food.
