Welcome to the lab. Ramen Lab Eatery is where South Florida’s ramen story begins. Part science, part soul. Founder Louis Grayson built it as a working ramen laboratory, the first in Boca Raton to make ramen, soba, and udon from scratch every day. Broths simmer for 12 hours, dumplings are hand-wrapped, and sauces come from the same family recipes that started it all. The menu shifts with experiments: five-spice duck ramen from Grandma’s notebook, tonkotsu with thick-cut pork belly, kimchi fries that shouldn’t make sense but do. Guests love the bao buns, the bubble teas, and the room that feels equal parts Tokyo street stall and South Florida chill. Whether it’s your first visit or your fiftieth, the lab always has something new on the burner.
