We’re a 100% sourdough bakery based in Arizona — born in a garage, raised by farmers markets, and now growing across the Valley with a mission that hasn’t changed since day one: real bread, made the old way. That means no shortcuts. No commercial yeast. Just flour, water, salt — and time. Lots of time. Our loaves and pastries are made with heritage grains grown locally and milled fresh in-house on our stone mill. We ferment everything naturally with Harriet, our sourdough starter (she’s been with us for over a decade now and she’s still going strong). Why? Because we believe in baking that honors tradition, respects the land, and supports our local food economy. We’re family-run, obsessed with craft, and constantly trying to stretch what’s possible when you don’t cut corners At Proof, we don’t just make food. We make nourishment. And we’re not just building bakeries — we’re building places where families can slow down, share a meal, and maybe even fall in love with the process behind the loaf.
