Jose was born and raised in Monclova, Coahuila, Mexico, where he discovered his passion for baking alongside his mother. From a young age, he learned family recipes passed down through generations, including the Carlota pie—a traditional dessert that would later become the heart of his business. At just fourteen years old, Jose moved to the United States, carrying with him his family’s culinary traditions and a strong desire to build a better future. The transition was challenging. He faced a new language, a new culture, and the pressure of starting over, but baking remained his constant. Over the next two years, Jose dedicated himself to learning English while refining his recipes. By 2025, now 16 years old, he felt confident enough to begin selling his pies at school, starting with the same Carlota his mother taught him to make in Monclova. His journey was not without setbacks. After being stopped by school administration, Jose chose determination over giving up. He secured the proper permits, enrolled in business classes, and learned how to operate legally while continuing his education. In just three months, Jose sold over 2,000 pies. What began as a small passion project evolved into Pepe’s Factory, a growing bakery rooted in tradition, resilience, and ambition. Today, every dessert honors his heritage and the love that started it all.
