We blend a relentless Midwest and Cuban work ethic with a passion for research and experimentation. We respect traditional styles but don't just copy them—we perfect them with our own signature twists. Take our pastrami: we experimented until we nailed a rigorous 4-day process of desalting, spice-bark curing, deep wood smoking, and a low-and-slow finish. The Cuban soul of our kitchen, Mirna, operates with that same zero-shortcut dedication, spending 40 hours marinating our pork in a secret blend of rum, mojo, and culantro. We rest it overnight, slice it cold, flash-sear it, and press it in authentic Cuban bread (with the traditional palm leaf strip) using our signature quad-garlic butter. Our menu is built on intense umami and massive portions. From our "Lace Edge" smash burgers to our wings, everything is fried in 100% pure beef tallow for a crisp and flavor vegetable oil can't touch. We are Big Sexy Eats.
