We hand-roll every tamale the morning it goes out. We mix the masa, cook the fillings, and roll by hand that day. No freezer, no batches thawed from weeks ago. The ones on your table were made a few hours earlier. We stick to three flavors and do them right: pork in our red chili sauce, seasoned shredded chicken, and green chili with melted Monterey Jack. Real masa, real ingredients, no filler. Then we drive them to you, across Bend and Central Oregon, from Redmond and Sunriver out to Sisters, Prineville, La Pine, Tumalo, and Terrebonne. Order by 11 AM and we can usually deliver the same day. One dozen for a weeknight dinner or seven-plus dozen to cater an event, either works (catering needs a couple days' notice).
