Hotel Jerome, Auberge Collection Names Zak Gregoire Executive Chef

Hotel Jerome, Auberge Collection, a fixture in Aspen for over 137 years, is pleased to announce the appointment of Executive Chef Zak Gregoire. Bringing a global culinary perspective shaped by luxury hotels, fine dining restaurants, and private clubs, Gregoire will oversee the property's celebrated food and beverage program, building on Hotel Jerome's legacy of exceptional dining with a philosophy centered on seasonality and regional traditions.

Raised on Nantucket Island, Massachusetts, Gregoire developed an early love for the outdoors through fishing the Atlantic, camping throughout New England, and cooking over open fire. Those formative experiences instilled in him a deep appreciation for seasonality and hospitality, principles that continue to shape his culinary philosophy today. His career later took him to NoMad in New York and Los Angeles before serving as Executive Chef at the historic Groton Inn in Massachusetts. In 2023, he relocated to the United Kingdom, where he was appointed Executive Chef of NoMad London in 2024.

As Executive Chef at Hotel Jerome, Gregoire will oversee the property's acclaimed culinary program, which includes J-Bar, The Living Room, Bad Harriet, Garden Room, Events, Felix Roasting Co., and most notably, Prospect, the signature restaurant celebrating the region's natural rhythm and bounty in a setting that feels both timeless and unmistakably Aspen. Gregoire will lead the culinary team with a focus on seasonality, collaboration, and exceptional hospitality, further strengthening the property's reputation as one of Aspen's premier dining destinations. His approach will celebrate the flavors of the region – offering a true sense of place – while honoring the hotel's storied legacy, creating experiences that are both rooted in tradition and distinctly contemporary.
