Saluti! Café Margaux features Italian winemaker Giulio Rossello at upcoming wine dinners

Rossello Vini, a family vineyard in Italy's Piedmonte, has been blessed with spectacular looks and wines. Café Margaux has tapped unto this enological cornucopia as a fitting end for its 2023-2024 wine season.

Not only is the Cocoa Village restaurant importing a selection of Rossello's best wines for its two days of five-course dinners, it is also importing the winemaker, fourth-generation wine grower Giulio Rossello, who will be providing commentary during dinner.

Rossello will discuss how his lovely terraced vineyards, located between Turin and Savona, nurtures such variety.

"Our terroir gives us a chance to cultivate so many different wines," he said.

"We have such an amazing number of microclimates."

The terraces are built on sandstone that stores heat during the day and slowly releases it at night, thus contributing to a strong characterization of the grapes - and of the wine - produced there.

"There is an amazing complexity and explosion of taste in our wines," Rossello added.

Rossello's great-grandfather, Cavalier Bernardino Rossello, founded the company in 1920. The winery enjoys a reputation for its Barolo and Barbaresco wines, both of which will be among those selected for the Margaux dinner.

The five-course menu features cream Yukon Gold and Rock Lobster soup; a salad of baby spinach tossed in roasted pear vinaigrette with Stilton, black figs, pancetta ad toasted Marconas; a fish course of Szechuan peppercorn-seared swordfish with crimini leek risotto' seared venison loin with scallion-whipped Yukon Golds; a cheese course of Castelmagno cheese from the Piedmont and dessert of hazelnut passion chocolate shortcrust pastry filled with hazelnut cream.

Rossello considers a Café Margaux wine dinner a match made in heaven for his wines.

"The attention to detail is amazing," he said.

"It's beautiful to work with them on a wine dinner."
