In a pan over medium heat, melt the butter and keep it moving until it foams and begins to darken. Once the butter turns golden brown (but not too dark!), add fresh sage to the pan. Let the sage sizzle and infuse the butter with flavor. Pour the butter sauce over cooked pasta and toss to coat. Season with salt and pepper, and top with grated Parmesan cheese, if desired.
