Biscuits are easily one of my favorite baked goods. I love their versatility—whether for breakfast, as a side with lunch or dinner, or even incorporated into dessert. Even better? There are so many delicious styles of biscuits, from ultra-tall and fluffy
to ones with a tender center and crisp, golden exterior. There's even the recipe Dolly Parton's famous for
, a skillet drop biscuit method
, a trick using bacon fat
and more. Plus, don't forget all of Ina Garten's tips
for inspiration—the possibilities are endless.
Personally, I prefer biscuits with contrast—a soft, steamy middle and a crust that offers just a bit of crunch. And that's exactly the kind of biscuit you'll find at Tandem Coffee + Bakery
in Portland, Maine. People travel to Maine just to get their hands on them—and it's easy to see why. If you can't make the trip, though, you can definitely recreate a batch at home.

What Are Tandem's Buttermilk Sugar Biscuits?
Tandem is known for its incredible biscuits, made using a recipe developed by baker Briana Holt. Their signature texture sets them apart: a tender interior with a heartier, slightly crisp crust and lots of visible layers. Buttermilk helps keep the centers fluffy, while the addition of more sugar than in a traditional Southern biscuit gives them a perfect sweet-savory balance. That contrast makes them incredibly versatile and satisfying any time of day.

How To Make Butter milk SugarBiscuits
You only need six ingredients to make a batch: cold butter
, flour, sugar, baking powder, salt and buttermilk. Grate the butter and freeze it ahead of time. Then whisk together the dry ingredients, add in the grated butter, and make sure it's well-coated with flour. Slowly mix in the buttermilk in two parts to form a crumbly dough.
Transfer the dough to a floured surface and knead it briefly to bring it together. Roll it into a rectangle, fold it like a letter, then roll it out again. Repeat this folding and rolling process a few times to create plenty of flaky layers. Cut into squares or use a biscuit cutter for round biscuits, then bake at 375°F until golden brown.

Ways To Enjoy Buttery Biscuits
The beauty of biscuits is how flexible they are. Serve them warm with butter, honey, or jam for breakfast—or go all in with biscuits and gravy. Swap in a biscuit instead of bread for a lunch sandwich, or pair one with soup or stew at dinner.
For dessert, biscuits shine in strawberry shortcake , layered with whipped cream and fresh berries. Or take things further and build a biscuit sundae with a scoop of ice cream and all your favorite toppings.
