There’s an art to biscuit making —and it doesn’t look the same everywhere. But ask any Southerner , and they’ll tell you: it’s not just about a gentle hand or whether you use Crisco . One ingredient makes all the difference—the flour. More specifically, White Lily flour.

This isn’t like the Duke’s vs. Hellmann’s debate, where brand loyalty runs deep, but alternatives still have a place. When it comes to biscuits, White Lily is in a category of its own. The 140-year-old brand has long been the quiet backbone of Southern baking , thanks to what makes its flour different. Milled from 100% soft winter wheat, it has a lower protein content than most flours, so less gluten forms as you mix—resulting in biscuits that bake up incredibly tender, light, and fluffy.

Traditionally, that magic has been reserved for scratch-made biscuits . But now, White Lily is making a move that brings that same signature texture to a much more convenient format.

White Lily Launches New Frozen Biscuits

For the first time ever, White Lily is heading to the freezer aisle, offering a product fans have been waiting on for years: frozen biscuits.

If you’ve ever baked frozen biscuits from brands like Pillsbury or Mason Dixie and found them dense or heavy, it’s probably not your oven—it’s the flour they’re made with. White Lily’s lower-protein flour changes that, keeping biscuits light, tender, and much closer to homemade .

After all, White Lily hasn’t spent decades mass-producing biscuits—it’s simply been the flour people rely on to make them in their own kitchens. So even though these come from the freezer, they’re designed to deliver that same from-scratch feel.

The new line launches in two flavors: Southern Buttermilk Biscuits, with a classic tangy flavor, and Classic Butter Biscuits, with a richer, more buttery taste. Both are made with White Lily’s signature soft winter wheat flour and bake straight from frozen into hot, airy, table-ready biscuits in about 30 minutes.

"White Lily has been at the heart of Southern baking for generations," said Dan Anglemyer, COO of Hometown Food Company, in a press release . "These frozen biscuits deliver the same light, fluffy texture our fans love, now in a convenient heat-and-serve format."

The biscuits are sold in 27-ounce packages containing 12 frozen biscuits, and will begin rolling out across select Southeastern retailers this spring.

So, if you love Southern-style biscuits but don’t always feel like dealing with a mess of ingredients (or tracking down the right flour), White Lily is making it a whole lot easier. Soon, a batch of that classic Southern comfort will be waiting in your freezer.
