Summer is peak berry season, and if you're like me, that means loading up on strawberries
, blueberries
, blackberries
and raspberries
every time you go to the farmers' market. While plain berries
are always a welcome snack and go-to yogurt
topper, sometimes you want something a little more special. But turning on the oven for a full-on pie
or cobbler
? Not always appealing when it's 90 degrees outside.
This fresh berry salad with citrus syrup and lemon cream, shared by television personality, cookbook author and Recipe Club
founder Kelsey Nixon ( @kelseynixon
), hits the sweet spot (literally). It's light, elegant, no-bake and easy enough for a weeknight, yet special enough for a party.

What's So Great About This Fruit Salad?
This isn't your average bowl of mixed fruit. What sets this salad apart is a homemade orange syrup that lightly coats the berries, infusing them with just the right amount of sweetness and zing. It takes just five minutes to make but transforms the dish completely.
You start by simmering sugar, water and the zest and juice of a navel orange in a small saucepan. As it reduces and becomes syrupy, your kitchen will start to smell like an orange grove. Let the syrup cool, then refrigerate until chilled. You want it nice and cold so it doesn't soften the berries when you pour it on.
While the syrup chills, whisk together a quick lemon cream that's equally simple and so luxurious. The combo of mascarpone cheese, lemon curd and heavy cream whips into a thick, tangy cloud that pairs beautifully with the sweet fruit. It's a little tart, a little rich and so delicious.
Then comes the best part: the berries, of course! You can use any combo you like, but this recipe calls for strawberries, blueberries, raspberries and blackberries—basically the full farmers' market lineup.
Toss them all together in a big bowl, drizzle them with chilled orange syrup and stir gently to coat. Add a handful of fresh mint leaves for a burst of herbal freshness and color, and you're done.

Easy to Customize; Perfect to Make Ahead
What I love most about this recipe, besides how beautiful it looks in a bowl, is how adaptable it is. No strawberries? Use cherries. Not a fan of mint? Swap in fresh basil or tarragon (or skip the herbs altogether). Want to try a different citrus? Use lime instead of orange for a tangier twist.
And keep in mind that the syrup and the lemon cream can be used for lots of things too. Add the syrup to lemonade or iced tea or serve with pancakes. The lemon cream is perfect with any summer fruit (peaches, nectarines and plums come to mind) and would be delicious with strawberry shortcake or pound cake.
If you're thinking ahead for parties or just trying to simplify your prep, this recipe is make-ahead-friendly. The syrup can be made up to a day in advance, and the lemon cream will keep in the fridge for up to three days. Even the salad itself holds up surprisingly well. Just cover it and refrigerate, and it'll still be fresh up to 12 hours later.
Whether you're hosting brunch, heading to a potluck or just want a healthy-ish dessert, this berry salad with citrus syrup and lemon cream is the perfect way to celebrate peak summer fruit.
