Adding water takes up space between the eggs' proteins and keeps them from binding too tightly and getting rubbery as they cook. The recipe also creates perfectly-cooked eggs that can be sliced and used to build an egg sandwich . There are a few different things to keep in mind with this recipe. One is that it uses water a few different ways to create that velvety egg texture.

To make these eggs , preheat your oven to 300° and crack eight eggs into a bowl (you can scale down if you're cooking for one or two people). Next, add a quarter teaspoon of salt and ⅔ cup of water. Whisk the mixture together and pour it into a greased 8-by-8-inch metal pan. 

Create a water bath by placing the 8-by-8 pan in a larger baking dish and filling the larger dish with enough water to come halfway up the smaller pan. Baking the eggs in a water bath lowers the temperature surrounding the pan and keeps the edges of the eggs from overcooking while the middle sets up. Cook the eggs until they're fully set, which should take 30 to 40 minutes. 

Let the eggs cool slightly before flipping them out of the pan and slicing them to fit your sandwich. You can go with square slices or, if you want to have a little fun with your breakfast, use cookie cutters to make cool shapes. 

You can use the eggs right away, or layer them between squares of parchment paper and store them in the fridge in an airtight container for later. When you're ready to reheat them, place the eggs on a plate and microwave them until they are set.
