I Tried the Boxed Mac and Cheese Hack That's Going Viral and It's a Total Game-Changer

For many families, boxed mac and cheese is a weeknight staple, but in my house, it's usually a no-go. The only version my kids will touch is the baked mac and cheese I make every Thanksgiving.

How This Boxed Mac and Cheese Hack Works
The method is surprisingly simple but requires a little patience. Instead of boiling the noodles in a big pot of water, you cook them directly in a shallow pan with just enough water to cover, or about a cup. You add butter, the packet of powdered cheese and a sprinkle of shredded cheese right in at the start, then bring everything to a simmer.
The trick is to cook over medium heat and stir continuously, so the noodles don't stick. When the noodles are tender, stir in the milk and let the mac and cheese sit about five minutes to thicken up.
"I saw it on the Taste of Home website, I believe they saw it on TikTok," Gigliotti tells Parade . "It worked the first time we tried and my daughter loved it so much she made it herself the next night, watching my video as a tutorial. It was so good!"
She added that it doesn't have to be a specific brand. "I'm sure it works with any box, we just tried it with Kraft," she shares.

My Experience Making It
Both the original and gluten-free versions of this boxed mac and cheese turned out buttery and creamy when cooked using this hack.
I decided to put the hack to the test with both regular and gluten-free mac and cheese. The process sounds easy, but it does require focus. I have a gas stove, and because I was making two pots at once, I had to keep a close eye on both to prevent sticking.
Gigliotti warned me about this exact challenge.
"You can't boil it like regular pasta or the noodles will stick to the bottom of the pot. You have to simmer it on medium to medium-high and stir continuously, don't walk away," she advises.
After about 12 minutes of steady stirring, both versions were done. The noodles absorbed the liquid perfectly, the cheese powder melted into a glossy sauce and the butter made everything rich and smooth. I couldn't believe how creamy and decadent they tasted, and it was definitely closer to homemade mac and cheese than the classic boxed version.
The gluten-free noodles didn't get gummy, which can often happen. Instead, they were buttery, tender and flavorful. My kids still preferred the regular version, but even I thought the gluten-free option came out really well.

What I Love About This Mac and Cheese Trick
Cooking the noodles directly in the cheese and butter mixture infuses them with flavor from the start. Instead of draining and then adding a sauce, everything cooks together in one pot. That concentrated starch from the pasta water helps create a thicker, creamier cheese sauce that clings to the noodles.
Gigliotti also mentioned that people have gotten creative with the hack.
"Some suggestions in the comments were to use all milk to boil the noodles instead of water, add sour cream at the end instead of milk, add mustard in, add in spices, but I've only tried it the one way," she tells Parade .
Even without extras, the difference is huge. This is nostalgic comfort food at its finest, made in less than 15 minutes.
And did I mention my kids ate the whole box? That's a huge win!
This boxed mac and cheese hack is a total game-changer. It takes a little more effort than dumping noodles into boiling water, but the payoff is worth it. The buttery, rich, perfectly textured noodles taste so much like homemade, I had to do a double-take.
If your kids usually turn up their noses at the boxed stuff like mine do, this might be the trick that gets them to eat it.
