Preheat your oven to 400°F. Place chicken thighs, skin side up, on a sheet pan, pat dry, rub with olive oil, salt, and pepper, and roast for 30-40 minutes until golden and cooked through. In an oven-proof sauté pan, heat butter and olive oil, then sauté chopped onions and leeks for 5-7 minutes until soft. Add garlic and cook for 2 more minutes.
