Melt butter and chocolate in the microwave, stirring every 30 seconds until smooth, then cool slightly. Whisk egg yolks into the chocolate mixture. In a separate bowl, beat egg whites to soft peaks, gradually adding sugar until stiff peaks form. Fold about a quarter of the egg whites into the chocolate mixture, then gently fold in the rest. Pour the cake batter into the pan and level with a spatula. Bake at 275° for 45–50 minutes, or until the cake pulls away from the pan. Cool completely before serving.
