How to Make Crispy Crock Pot Chicken Tacos

One of my favorite things about using a slow cooker is how effortlessly it transforms simple ingredients into tender, flavorful meals. Every week, I try to incorporate some form of Crock Pot recipe into my meal plan because it's so easy to use. It's so easy to make slow-cooker soups, dump-and-cook meals and big batches of hearty proteins (creamy chicken, pulled pork, etc.) that can be stuffed into tortillas, piled on top of salads or spooned over rice or mashed potatoes.

Plus, the leftovers you have from these types of meals are just as good (if not better) the next day! Tucking leftover slow-cooked meat into a crispy or soft taco shell is a classic move (and a delicious one), but to mix up your taco night, we suggest giving these crispy baked tacos a try. They're a streamlined version of what's sometimes known as tacos dorados (golden tacos), which are soft tortillas stuffed with meat that are then deep-fried until crispy. This version bakes the tacos instead of frying them, which is way easier.

You can grab the full recipe on the creator's Instagram page, but you'll need chicken breasts, green chili, salsa verde or enchilada sauce (use your favorite), almond flour tortillas (or your tortilla of choice), Mexican blend cheese and something for dipping, like salsa, guacamole or queso (or all of them).

Start with the chicken. Just add the chicken and your sauce of choice to a Crock Pot and cook on low for 6-8 hours, until the chicken shreds easily.

Once the chicken is cooked, lay out your tortillas on a large baking sheet. Drizzle the tortillas with olive oil and rub both sides until lightly coated. Layer the shredded chicken on half of each tortilla, sprinkle with cheese, then fold each tortilla in half, pressing gently to make sure they stay folded while baking. Bake at 375° for 20-30 minutes, flipping halfway through for even crisping on both sides. If you like extra-crunchy tacos, broil them on low for 2 minutes.

When the tacos are done to your liking, pair with salsa, queso, avocado or your favorite toppings for the ultimate taco experience!
