And when it comes to great shortcuts, few grocery staples are as beloved as a box of Jiffy corn muffin mix . You can spot the iconic blue and yellow box as soon as you turn down the baking aisle.

Jiffy cornbread mix has been an American staple since it was introduced in the 1950s because of its affordable price point, consistent quality and the endless ways you can customize the mix. Don't believe me? Go online and you'll find so many secret ingredients that are touted to make Jiffy cornbread moister, richer, fluffier, heartier and so on and so on.

But with summer around the corner, we wanted to find a way to dress up one of our pantry faves in a way that celebrates the season. To turn a box of Jiffy mix into a juicy summertime dessert, use it to make a fruit cobbler with one of summer's juiciest fruits , blueberries.

Why Does Adding Blueberries to Boxed Cornbread Mix Make It Better?

When they're at the peak of freshness, you should really find any excuse to incorporate blueberries into every breakfast, lunch or dinner. Blueberries are a natural match for cornbread because the sweet-tart fruit balances the savory, buttery flavor of classic Jiffy cornbread. The resulting blueberry cornbread cobbler is vaguely reminiscent of a blueberry muffin , only this time, there's the heartier texture and supremely golden crust of cornbread. How to Make Blueberry Cornbread Cobbler with Boxed Jiffy Cornbread Mix

There are a few blueberry cornbread cobbler recipes out there, but we've based our how-to on the recipe from the U.S. Highbush Blueberry Council website , a group that knows their fruit.

In a baking dish, add blueberries , apricot preserves or jam and your choice of apple or orange juice. Toss the ingredients to fully combine and spread into an even layer in the pan. Next, prepare a box of Jiffy cornbread mix according to package directions, then pour it evenly over the berries. Bake at 400° until the top of the cornbread is firm but lightly browned and blueberries bubble, about 20 minutes. Serve warm or at room temperature.

This Jiffy blueberry cornbread cobbler trick is perfect when you want something homey and comforting but don't want to make dessert completely from scratch.
