I'm always on the lookout for easy desserts and I recently found one that was easy to make gluten-free and didn't require any baking. Sign me up! I spotted this super simple chocolate eclair cakeon content creator and cookbook author Tara "T" Ippolito's page ( @aldentediva ) while scrolling one evening and thought, There's no way it's that simple. Spoiler alert: it is.
With just a handful of ingredients and a few quick steps, I had a dessert chilling in the fridge that my kids absolutely devoured. No baking. No complicated techniques. No stress.
I made a half batch the first time to make sure this recipe was worth making again (and thanks to the small package size of my gluten-free graham crackers), but next time I'm making the full recipe. It was that good!

What is Eclair Cake?
Eclair cake is a no-bake dessert inspired by the flavors of a classic French éclair, but made in an easy, layered format.
This dessert has soft, creamy pudding and whipped topping sandwiched between slightly softened graham crackers, then it's finished with a glossy chocolate frosting layer that adds a lot of richness. It's part pudding pie, part icebox cake, and all dream-come-true dessert.

This was all it took to make a delicious chocolate eclair cake.
How Do You Make Eclair Cake?
There are many versions of eclair cake online, but I based mine on Ippolito's easy recipe . It starts with a base layer of graham crackers laid out in a baking dish. Because I halved the recipe, which worked out perfectly for a smaller crowd or weeknight treat, my dish was smaller than the one Ippolito used in her recipe video.
Then, I whipped together one packet of French vanilla pudding mix with milk until it was smooth and thick and folded in half a tub of thawed Cool Whip until the pudding mixture was silky and fluffy. (Ippolito used two packets of pudding mix and a whole container of Cool Whip for the full recipe.)
The hardest part of making this dessert was not licking the spoon.
Once the pudding and whipped topping were fully combined, I spooned half of the mixture over the graham crackers, smoothed it out, and added another layer of graham crackers on top. Then I spread the rest of the pudding mixture to create a second creamy layer.
Like Ippolito, I used a store-bought container of chocolate frosting, microwaved it (after removing the metal lid liner) for about 30 seconds right in the container, and poured it over the top of the pudding. This is one ingredient I did not halve! It spread like a dream and settled into a smooth, shiny layer of chocolate that hardened slightly as it chilled.
After two hours in the fridge, the eclair cake was ready and sliced beautifully.

Why This Dessert Is Perfect for Summer
There are a lot of reasons this dessert has become my go-to for summer, but let's start with the obvious: no oven! I don't know about you, but the last thing I want to do when the weather gets hot and sticky is turn on my oven. This recipe doesn't require any baking at all, just a little whisking and layering and you're done.
This eclair cake was easy, rich and delicious.
It's also wonderfully refreshing. The pudding and Cool Whip combination stays cool and creamy in the fridge, and the chilled chocolate frosting on top adds just the right amount of richness. It's the kind of dessert that feels light enough to enjoy after dinner but also tastes like a special treat.
And let's not forget the flexibility. You can easily make it gluten-free with the right graham crackers, and you can switch up the flavors. Try chocolate pudding instead of vanilla, or even mix in a little peanut butter for a twist. Use homemade whipped cream instead of Cool Whip if that's more your style, or make chocolate ganache from scratch for a more elevated take.
The texture is also worth mentioning. After chilling, the graham crackers soften just enough to become cake-like. Each bite has a little crunch from the edges, creaminess from the pudding and sweetness from the frosting. My kids licked their plates and asked for seconds (and so did I, if I'm being fully honest)!
This eclair cake is my new go-to dessert.
