This week, Chad and Brett Hermansen are joining the folks from Daggett County as they take you on some of the most diverse and scenic off-road riding that you can experience in the state of Utah. Right next to the town of Dutch John is the Flaming Gorge Dam, and that\u2019s where they start their ride, directly from the visitors center. Quickly climbing up from the dam, the Pipe Creek trail takes you up into the aspen and pine before joining the Spruce Creek trail, which takes you to a small creek which is perfect for a relaxing stop. It\u2019ll be a nice, easygoing day.<\/p>

Preheat oven to 350\u00b0F. Heat 2 tbsp. oil in a large skillet over medium high heat. Add ground beef and break up into small chunks. Season with salt. After 2 minutes, begin to stir beef so it can brown on all sides. Once beef is mostly browed, add a \u00bd can of the enchilada sauce and stir into the beef. Turn heat to medium low and allow the sauce to thicken while stirring occasionally, about 5 minutes.<\/p> 2. When the sauce is no longer runny, remove the beef from the heat and set aside. Spray a large casserole dish with nonstick spray, and add the remaining \u00bd can of enchilada sauce, covering the bottom of the dish.<\/p> 3. Heat a clean skillet over medium high heat and add one tortilla at a time. Heat each side of the tortilla for about 15 seconds and remove to a plate. Repeat with remaining tortillas.<\/p> 4. Assemble the enchiladas by adding a \u00bc cup cheese and a \u00bd cup ground beef to a tortilla and roll it up. Set the filled tortilla seam side down into the casserole dish. When all 8 enchiladas are in the dish, cover them with the remaining enchilada sauce, and then cover them with the remaining cheese.<\/p> 5. Put the casserole dish into the preheated oven and bake uncovered for about 30 minutes, or until the cheese is bubbly. Take out of the oven and allow the enchiladas to rest for 10 minutes.<\/p> 6. 2 lbs Yardley\u2019s Premium Beef
Butter
One large yellow onion \u2013 diced
2 large carrots \u2013 grated
4 eggs
\u00bc cup cream or half and half
Worcestershire
Salt & Pepper
Ritz crackers \u2013 ground up
Ketchup
Dry mustard
Cane sugar OR brown sugar
Parsley for garnish<\/p>
Preheat oven to 350
In one large pan melt \u00bc cup of butter
Then Saute diced onion and grated carrots
Once carrots and onions have softened remove from heat and let cool down
In one large bowl add 2 lbs Yardley's Premium Beef
add softened vegetables
add 4 eggs
add \u00bc cup cream or half and half
add a few dashes of Worcestershire
add salt and pepper
add ground up ritz crackers
then mix well
once well mixed shape as a loaf on your pan (we used a rack with parchment paper)
in a separate bowl for topping add 2 cups of ketchup
add 1-2 Tbsp of dry mustard
add 1-2 Tbsp of cane sugar or brown sugar
mix well and put a small portion on top of your meatloaf
cook in oven for 45 minutes
remove loaf and spread more topping on the loaf
place back in the oven and cook for another 25 minutes
remove and let cool
garnish with parsley then serve!<\/p>
It is a tradition that started in 2009. Today on At Your Leisure, Chad Ria and the whole AYL crew Ride to Remember with the Steadman Family from Steadman\u2019s Recreation for the 13th Annual Red White and Road Motorcycle Rally in Torrey Utah. For many it is a return event, for some it is a \u201cbucket list\u201d event as it is their first ride on Historic Utah Highway 12. But for one person, it is their first glimpse of Utah beyond the Salt Lake Valley.<\/p>

It has been quiet on the trail closure issue for a while, but with the court ordered review of all travel plans in Utah, some of Moab\u2019s most iconic trails are in imminent danger of being closed permanently. We will look at some of these trails and give you step by step instructions on how you can help stave off this attempt to close 437 miles of trails near Moab.<\/p>
On this week\u2019s Where To Adventure, we\u2019re taking you on a Rafting adventure down the Green River, not only is it a scenic and exciting experience there's also amazing history to be seen including fascinating petroglyphs.<\/p>
Katy Yardley from Eagles Landing is sharing a mouthwatering recipe for Jalapeno Au Gratin Potatoes. With just enough spice to tickle your tongue without the burn, this delicious meal would be great for your next family meal. Be sure to follow along for all her secrets to make this amazing dish.<\/p>
4 Tbs Butter
2 whole jalapenos (diced)
2 cups heavy whipping cream
3 cups half\/half
8 oz softened cream cheese (1in cubes)
\u215b tsp fresh ground nutmeg
5 medium russet potatoes (sliced \u215b in thick)
3 cups shredded sharp white cheddar cheese
1 cup shredded parmesan cheese<\/p>
1. Peel and slice the potatoes, set aside. (If prepping more than an hour in advance, submerge the potatoes in a large bowl or container of water, this will keep the potatoes from oxidizing and changing color.)
2. Preheat oven to 375\u00b0F.
3. Melt 2 Tbsp. butter in a saucepan over medium-high heat.
4. Add jalapenos and saut\u00e9 for 3 minutes.
5. Add heavy whipping cream, half\/half, cream cheese and nutmeg. Add salt and pepper to taste. Stir constantly and bring to a simmer. Once it comes to a simmer, remove from heat.
6. Butter the bottom of a deep casserole dish (9inx13in), lay the potato slices down in a single layer, overlapping the potatoes like roof shingles.
7. Slowly ladle \u2153 of the cream mixture over the first layer of potatoes, sprinkle salt and pepper over that, then add 1 cup cheddar cheese on top.
8. Repeat two more times by layering the potatoes, cream mixture, and cheddar cheese.
9. Add the parmesan cheese on top.
10. Spray the bottom side of a sheet of aluminum foil with non-stick cooking spray and cover the baking dish. Put in the preheated oven and bake for 1 hr 15min.
11. After 1hr 15min, remove the foil and continue to bake another 15 min.
12. Remove the baking dish from the oven and allow it to rest for 15-30 min, then serve.<\/p>

This ride goes through Immigration Canyon, over East Canyon through Trapper Loop then goes over the top of Monte Cristo and comes out at Woodruff before working back down Mirror Lake Highway. It\u2019s easily a full day\u2019s ride but you\u2019ll want to be sure to give yourself enough time to stop and do some sightseeing as the entire ride is filled with spectacular views.<\/p>

This week on AYL Scott and Tonya Huntsman are taking some of their family and friends and heading up to Hardware Wildlife Management Area. Hardware is a great place to get out in the outdoors during the winter months and enjoy some amazing wildlife viewing opportunities as the rocky mountain bull elk migrate to the ranch to feed during the hunting season.<\/p>
Katy Yardley is back in the kitchen and she\u2019s cooking up her version of one of her favorite dishes: Swedish meatballs. She\u2019s using Yardley\u2019s Premium Beef ground steakburger, and to keep it simple and save on the mess, she\u2019s cooking the meatballs in the oven.<\/p>
2 lbs ground Steakburger
1c crushed Ritz crackers
\u00bd tsp ground allspice
\u00bd tsp ground nutmeg
\u00bd c grated onion
\u00bd tsp garlic powder
\u00bc tsp black pepper
1 tsp salt
2 eggs<\/p>
4 Tbs butter
4 Tbs flour
3 c beef broth
1c heavy cream
1 Tbs Worcestershire Sauce
2 Tbs Dijon mustard
1 Tbs Better than Bouillon Beef Base
Salt and pepper to taste<\/p>
2. Combine beef, onion, eggs, and spices in a bowl and mix well (Your hands work best).
3. Roll the beef mixture into balls that are 1 \u00bd to 2 inches in diameter.
4. Place meatballs on a parchment lined baking sheet, about \u00bd in apart.
5. Put meatballs in the oven and bake for 25-30 minutes.
6. While the meatballs are cooking, melt the butter in a dutch oven or stock pot over medium high heat. Once the butter is melted, add the flour and stir constantly with a whisk until it begins to turn golden brown (3 to 4 minutes).
7. Add the beef broth \u00bd a cup at a time while stirring.
8. Add the beef base, mustard, heavy cream and Worcestershire Sauce. Stir to combine.
9. Turn the heat to medium low and allow the sauce to simmer for 5 minutes.
10. When the meatballs are done, (internal temp of 165\u00b0F) take them out of the oven and add them to the pot with the sauce. Let them simmer on low for 5-10 minutes.
11. Serve over rice or egg noodles, and they\u2019re even better with a side of lingonberry jam.<\/p>

Scott and Tonya love Jeeping and Rock Crawling but they especially enjoy getting to adventure on new trails like this one known as John\u2019s Trail. John\u2019s Trail is a 7 rated trail and is certainly not for the faint of heart as you\u2019ll tackle several challenging obstacles along the way. This week, Katy Yardley is back with a delicious recipe for a marinated beef dish that can be served over rice. This is a simple recipe that can be completed easily with all the right ingredients.<\/p>
1 lb flank steak, tenderloin, or sirloin (thin sliced, against the grain, into bite size chunks or strips)
1 cup peanut oil (or vegetable oil)
\u00bd cup red bell pepper (cut into \u00bd inch squares)
\u00bd cup yellow onion (or white onion - cut into \u00bd inch pieces)
1 tablespoon garlic (minced)
6 tablespoon cornstarch<\/p>
1 large egg (beaten)
\u00bc teaspoon salt
2 tablespoon water (cold)
1 tablespoon cornstarch<\/p>
\u00bd cup water
1 tablespoon soy sauce
2 tablespoon apple cider vinegar
1 teaspoon crushed red pepper flakes
\u00bc cup sugar
3 tablespoon ketchup
3 tablespoon hoisin sauce
1 tablespoon oyster sauce
1 tablespoon sweet chili sauce<\/p>
2. Place your sliced beef in the marinade and mix until well coated.
3. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour.
4. In a small bowl, combine the Beijing sauce ingredients: water, soy sauce, apple cider vinegar, crushed red bell pepper flakes, sugar, ketchup, hoisin sauce, oyster sauce, and sweet chili sauce.
5.Whisk until the sauce is smooth, then set aside. Heat a wok, large skillet, or frying pan to medium-high heat with the peanut or vegetable cooking oil.
6. While the wok is heating, add 6 tablespoons of cornstarch to a medium-size bowl and coat the marinated beef with the cornstarch. Discard any remaining marinade.
7. Transfer the coated, marinated beef to your heated wok and cook until all sides are browned and crispy, about 2 - 3 minutes. Use tongs to turn the beef while cooking, as needed.
8. Once cooked, remove the browned strips of beef to a paper towel-lined plate and set aside. Clear any debris from your cooking oil and increase the heat to cook the vegetables on high heat.
9. Add the sliced red bell peppers and onion and stir fry for 2 - 3 minutes.
10. Add the minced garlic and cook for about 30 seconds, or until fragrant.
11. Once the vegetables and garlic are cooked, transfer them to the plate that the cooked beef strips are on and set aside.
12. Place the Beijing sauce in your wok, still on high heat, and bring to a boil to thicken. Cook for 3 - 5 minutes to reach the thickened consistency.
13. Return the beef and vegetables to the wok with your sauce and toss to coat thoroughly. Continue to toss until the beef is warmed through, serve immediately.<\/p>

This week Brianne and Jared Johnson are taking their family to The Cabins at Bear River Lodge as they take to the mountains in the winter weather. Generally you wouldn\u2019t want to tread the storm with your three young children but have no fear, Brianne and Jared are fully equipped with all the tools they need to have a great time as they are adventuring in trax Can-am defenders. These machines are truly ideal to tackle the winter terrain as they are fully enclosed with heated cabs. Join them as they stay warm at the Whitney Warming Hut followed by a luxurious stay in the magnificent cabins at the lodge. Of course, any stay at the lodge is best completed with a nice hot meal at the diner and a dip in the large year round hot tubs.<\/p>
This week, Reece and Marianne Stein are at Echo State Park participating in the first part of the Quadfishathon, an event which takes place at 4 different state Parks in Utah. Echo State Park is one of the newest parks in Utah and offers a great place to ice fish just minutes from Salt Lake City. Participants make their catch and officials measure the length to determine who has the largest fish. There are cash prizes for the individual parks, as well as overall winners who participate in all 4 events.<\/p>
A few months ago on the trail at the Trail Hero event, Scott Huntsman had some issues as he got hit by the breakage bug. This time he broke an axle and U joint and as a result he towed his beloved Ruby Red Jeep back to his shop in South Jordan. Now, Scott is reviewing and installing a new upgraded Carbon Off-road 4340 Chromoly dual heated replacement that should prove to be a stronger and more resilient joint to keep him riding on the trail in the future. This week Skyller and Heather Dykstra from the Dirty Adventure Crew are filling in for Chad and Ria as they take us along for one of their family traditions, an off-road adventure along the Nelson loop Trail in Nevada. This is a great journey combining three different routes: Copper Cache, Roller Coaster and Gold mine trail to create a loop that is filled with great diversity in the terrain. This renowned area in Wayne County was previously closed off to motorized recreation, but is finally open again! To celebrate, Chad and Ria are taking off into the dirt with some local government officials to show off the beauty, and incredible trails of this area! Your opinion and your access to lands matters, so make sure your voice is heard to keep our amazing recreation areas open!<\/p>
Just outside this incredible reservoir are some top-of-the-line trails! Check out the Joshua trees and red rocks that make Southern Utah famous and take your group out for either a quick ride, or make an entire day out of it! Gunlock Reservoir has many amenities, and its close access to these trails make it the perfect place to recreate!

Katy Yardley from Eagles Landing is showing off this incredible recipe made with Yardley's Premium Beef! This mouthwatering dish will have everyone in your family coming back for seconds!<\/p>
2 tbsp. oil
2 lbs. Yardley Steak Burger
2 packets of spaghetti seasoning
1 can of tomato paste
Salt and Pepper
30 ounces of San Marzano Tomatoes
15 ounces of Tomato Sauce
2 tbsp. of organic cane sugar
2-3 cups of beef broth
1 tbsp. on Worcestershire
2 cups of uncooked pasta
Shredded cheese
Basil leaves<\/p>
2 tbsp. oil \u2013 put in the pot
Then put in 2 lbs. Yardley Steak Burger
Add a pinch of Salt and Pepper
Cool until meat is browned
Add 2 packets of spaghetti seasoning and mix well
Add 1 can of tomato paste and mix well
Add 30 ounces of San Marzano Tomatoes
Add 15 ounces of Tomato Sauce
Add 2 tbsp. of organic cane sugar
Add 2-3 cups of beef broth
Add 1 tbsp. on Worcestershire
Once this comes to a complete boil add 2 cups of uncooked pasta
Completely stir in pasta
Cover the pot
Cook for ten minutes while stirring occasionally to prevent pasta sticking to the bottom
Uncover and cook for two more minutes
Top with shredded cheese and garnish with basil leaves before serving!<\/p>

On this week\u2019s episode of At Your Leisure, Chad and Ria are heading down to Mesquite as they join the Kokopelli ATV Club and the folks from Trail Passion Coalition as they spend the day riding on the trails out of Mesquite as our guides from Polaris\/Can-Am\/Honda World show off some incredible riding that can be hit by riding straight out of their shop. These trails offer some excellent riding for beginners but are also technical enough to keep the intermediate riders entertained.<\/p>
