Even though my husband is great at grilling, when my Dad came over for a cookout, he’s the one took the reigns at the grill. My husband never complained — he gladly handed over the barbecue tools to him and let him do his thing.
My Dad loved grilling (barbecuing) so much that when we moved to Vegas, he asked me almost every weekend if I had barbecued lately. Sometimes, I disappointed him for several weeks in a row. But those times when we did grill, I loved being able to tell him what I made. He found joy in hearing things like this and those simple conversations with him are probably what I miss the most.
Grilled Steaks with Easy Chimichurri Sauce recipe is something I wish I could share with my Dad. No doubt, he’d probably pronounce “chimichurri” wrong, which would have him giving up and saying “chimi-what??” in the funniest of voices. And even though my chimichurri has cilantro in it (and he really didn’t care for cilantro), he would no doubt tell me that I would have to make it for him when he moves to Vegas.
If you are also wondering “chimi-what??”, rest assured, it’s easy and anyone can make it. My version of chimichurri sauce is made with both parsley and cilantro, olive oil, red wine vinegar and other simple ingredients that will give pretty much any grilled meat some extra pizzazz.
The ingredients are all combined together in a food processor, which turns it into this beautiful green color.
To go with our easy chimichurri sauce, we grilled steaks, which are my husband’s favorite thing to cook on the grill. We picked up a big package of Cattleman’s Finest Beef Sirloin Tip at Smart and Final. There is lots of different steaks and sizes available at Smart and Final, but we went with this because we like the savings we received from buying the larger package.
Buying such a large piece of meat meant we had to cut it into individual steaks, but it was very simple (there is even directions on the label). David spent no more than 5 minutes cutting ours into pieces. We cut ours into a thickness of about 1 1/3 – 1 1/5″ . If you’d rather not cut your own meat, just buy a steak that you like to pair with this Chimichurri Sauce.
Grill your steak how you like over medium-high heat until they reach the desired doneness. After removing from the grill, allow your steak to sit for 5-10 minutes to allow the juices to distribute throughout the steak.
To serve your steak with the easy chimichurri sauce, we recommend that you cut the steak into thin strips, by holding the knife at a 45- degree angle. Place the sliced steak on a plate and drizzle with chimichurri sauce. So delicious!

Ingredients
- 2 teaspoons minced garlic
- 1 1/2 cups packed flat-leaf parsley leaves
- 1/2 cup packed cilantro leaves
- 1/3 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 tablespoon dried oregano
- 1/2 teaspoon dried red pepper flakes
Instructions
- In a food processor, add minced garlic, parsley, cilantro, olive oil, and vinegar. Pulse until parsley and cilantro are finely chopped. Add salt, cayenne, oregano, and red pepper flakes and plus until well combined.
- Serve with grilled steaks or your favorite meat. If serving with steaks, we recommend slicing your steak into strips at 45-degree angle. Place strips on plate and drizzle with chimichurri sauce.
Notes
–If you don’t care for cilantro, you can substitute it for additional parsley.
–If you wish your chimichurri to be thinner, add more olive oil.
