　Laurent said that the vines that produced the 2013 Morey St
　Denis Chenevrey were millerande. It has an intense bouquet
　with red Morello cherries, cranberry and flinty aromas.
　The palate is medium-bodied, well balanced with lightly peppered
　red berry fruit. It is missing a little depth toward the finish
　and feels quite linear, although there is a long peppery tail
　on the aftertaste. Very fine.

　The 2013 Gevrey Chambertin 1er Cru les Combottes, which was
　bought by Hubert Lignier way back in 1959, has an enticing
　bouquet that offers vanilla-tinged red cherry and crushed
　strawberry fruit. The palate is medium-bodied with considerable
　weight in the mouth. The tannins form a more masculine finish
　than the nose suggest, but there is sufficient fruit here to
　see it age over many years. Excellent.

　The 2013 Morey St Denis 1er Cru les Chaffots, which Laurent
　explained receives a little more sunshine since it faces southwest,
　but also retains good levels of acidity, underwent maturation
　in one-third new oak. There was a touch of reduction on the nose
　but the palate is succulent and fleshy on the entry, the acidity
　nice judged and it is bridled with a sense of composure and
　refinement on the mineral-laden and structured finish reminiscent
　of Clos Saint Denis just over the road. Superb.

　Ignore the 2013 Morey St Denis Vieilles Vignes at your peril!.
　Sourced from the usual premier crus, it was the last to finish
　its malo, according to Laurent Lignier. It has an intense red
　cherry and rose-petal bouquet that gains intensity as it shrugs
　off the reduction. The palate is medium-bodied with crisp tannins
　and find acidity, a touch of white pepper sprinkled over the
　tip of the tongue on the finish. This is outstanding.

　The 2013 Charmes Chambertin Grand Cru, which comes from the
　Mazoyeres sector, has a very well-defined and quite intense
　bouquet with live-wire red cherry and strawberry preserve
　underpinned by zingy citrus fruits. The palate is medium-bodied
　with fine tannin and plenty of sorbet-fresh red fruit that build
　toward a composed but energetic finish. No, not quite as
　thrilling as the 2012 tasted alongside, but surely one of the
　finest examples of this vineyard.

　ジャンリュック・テュヌヴァンの優れた助言に恵まれている。

　This beautiful wine from Fleur Cardinale performed great in
　its youth, both from barrel as well as post-bottling.
　A gorgeous blend of 70% Merlot, 20% Cabernet Franc and 10%
　Cabernet Sauvignon made by the Decoster family, the 2005
　provides more evidence that this property is fully exploiting
　its tremendous potential. A few years away from reaching its
　plateau of maturity, its stunning nose of black cherry liqueur,
　cassis, licorice, earth and spice is followed by a full-bodied,
　concentrated and pure wine.
　Drink it over the next 15 or more years.

　堅実なシャブリを醸造するもうひとつのドーヴィサ
　珍しいバックヴィンテージです、買い逃す手はありません！

『ドーヴィサと聞けば、ルネ・エ・ヴァンサン・ドーヴィサを思い浮
　かべる人が多いだろうが、忘れてはならないもうひとつのドーヴィ
　サがこのセバスチャン・ドーヴィサだ。

　それぞれの先代、ルネとジャンが従兄弟同士という間柄。ところが
　面白いくらいに両者のワインは異なっている。

　ヴァンサン・ドーヴィサがオーク樽を使った醸造をドメーヌのアイ
　デンティティとしているのに対し、セバスチャンはタンクが主体で、
　樽を使うのは１級畑ヴァイヨンの一部、ヴァイヨン・V.V.
（樹齢65年、2010年までは樹齢80年だった）とグラン・クリュのレ・
　プルーズ（樹齢60年）のみ。樽熟成期間は10ヶ月に留め、その後、
　さらにタンクの中で10ヶ月寝かせる。新樽は原則的に使わず、平均
　４、５年使用した古樽のみだが焼きは強い。

　セバスチャンは焼きが強いほうがシャブリのミネラルがきれいに出
　て、ミディアムトーストの樽を使うとかえってワインがバターっぽ
　くなりシャブリらしさが損なわれると主張する。』

　Sebastien Dauvissat's 2008 Chablis Vaillons Vieilles Vignes
　(specifically from the cru Chatains) had been assembled in
　tank when I tasted it in April, a portion having stayed out
　of barrel entirely, following the usual procedure for this
　cuvee. Here we have cut, vivacity, and refreshment allied to
　rich ripeness, with grapefruit, white currant, and a touch of
　rhubarb complimenting peach and nut oils. Hints of chalk dust,
　iodine, and white truffle as well as sweetly perfumed evocations
　of honeysuckle and heliotrope lend truly seductive allure to
　a cru that should be worth following for a dozen or more years.

　ヴァイヨンの中でも樹齢80年という古木から造られるワイン。
　30％は小樽を用いて醸造される。白い花、レモングラス、グレープ
　フルーツ。ほんのりと花の蜜を思わせる甘やかなニュアンス。凝縮
　感があり、口当たりはヴァイヨンらしいまろやかさ。複雑味もあり、
　若い段階でも心地よく楽しめるが、長期の熟成も可能なシャブリ。
