One of my hobbies is making buns. I have liked making buns since I made it for the first time before about six manths. So I have often been making it whem I am inclined to.
My favorite process is making dough. I found it was very fun that I made different type of doughs such as it was too soft to gather, not it was, so I worry to make mistake that putting much water at that time, then those were changing to gather gradually when I kept kneading.
And my best favorite process is fermentation. I used KOTATU for fermentation because we were in cold season at that time. When I saw about that in a book on making buns, I felt a little funny. But it changed, when I put gathered circle dough with wrap in KOTATU, and then it began to rise about double. I felt as if I grew something at that time. The time of making buns is always my family is not at home because of such a reason..
So I am a lazybones slightly, I sometimes hope that if someone makes buns after its fermentation because making buns spend many times. Especially croissant is like that. I have to repeat to weave butter into dough and put it in a refrigerator over three times. When I made it I alaways thought it that bakers' works are very hard. If I can weave butter into dough well, I will be able to make a good sound from them when I eat it. Though making croissant needs many times, it tastes delicious and rich.
I have tried making other buns such as buliwash(??), mini French bread, epi(??). If someone wants to eat my baked buns, I will offer MERONPAN. I used a little juice of YUZU instead of no lemon. Then its MERONPAN tasted good.
