第三に、異性化糖には終末糖化産物(AGEs、advanced glycation end products)の前駆体であるメチルグリオキサール(methylglyoxal)などの反応性ジカルボニル化合物が高濃度で含まれていることが、2019年の総説論文で明らかにされており、糖尿病用のダイエット飲料と比較して異性化糖含有飲料のメチルグリオキサール濃度が著しく高いことが報告されています[7]。AGEsは血管を硬化させ、慢性炎症を引き起こし、老化を加速させる分子的な「錆」のような存在です。つまり異性化糖とは、水銀・グリホサート・AGEs前駆体という「毒の三重奏」を体内に運び込む工業製品です。果糖の問題の「すり替え」に利用されているのです。
