Benjamin Nygren gave the hosts an early lead after eight minutes, but Poland restored parity shortly before half-time when Sebastian Szymański found the net.
Sweden regained the advantage in the second half through Yasin Ayari , before Viktor Gyökeres added a third in the 72nd minute to seal all three points.
Gudmundsson, 27, recorded 57 touches and completed 33 passes, while also creating one chance during his time on the pitch.
The defender made five defensive contributions, including two blocks, two clearances and an interception, as well as recovering possession twice and winning one duel.
The result leaves Sweden with a perfect six points from their opening two Nations League matches, with their next fixture coming against Tarik Muharemović 's Bosnia and Herzegovina on Friday.
