Led by Chef Alex Carballo, whose culinary journey spans from the Baja coast to the mountains of Veracruz, Nómada celebrates the diversity of Mexican cuisine through fire, flavor, and craftsmanship. Chef Carballo’s menu draws inspiration from his travels and heritage—featuring Oaxacan moles, mariscos from Sinaloa, and a nod to Tijuana’s iconic Caesar salad. The wood-burning oven takes center stage, infusing dishes like cochinita pibil, whole roasted fish, and smoky oysters with rich, rustic depth. Guests can also enjoy a raw oyster bar, ceviche, aguachiles, and tacos that range from Baja-style fish to crispy pollo doraditos and decadent duck tacos layered with bold, savory flavors. The space itself is an experience—warm Sonoran ranch-style design, natural wood and leather accents, fire pits on the patio, and a lively U-shaped bar serving mezcal- and tequila-forward cocktails crafted by GRG’s beverage director, Sean Ward.
