While living in the NorthEnd, my Noni made her own pasta and hung it from the clothes line on her front porch. Then she would masterfully roll "Little Ears" with such precision. The "Pasta Ladies of Bari" were known as the inventors of the Orecchiette: using their thumb to create the small ear shaped pasta we know and love.
