Coming into the food truck scene, we have wanted to be a story that stands out. This truck started in Windsor, CO, where the food truck scene isn't frequently done or over-saturated. Our mascot, Penny, is the owner's pup who is the inspiration behind everything. She has always been a light in their lives and loves the people. Making someone smile has always been an accomplishment for her, and that is what the brand Penny's is all about. We have worked closely with other small businesses in the community to collaborate on menu changes and fresh ingredients. Licensed in Windsor, Greeley, Estes Park, Severance, and communities across Northern Colorado. Open for discussions on more locations! We want to be something our community remembers and keeps coming back to. We do pop-ups at events, local breweries, regular locations, and even step off the truck to do event catering. Note: Business is not open 24 hours, but does not have specifically set hours as it depends on changing locations and weather.

We started our dream with a small food wagon. All we wanted is the northern Colorado area people to eat our tacos. We wanted the CO people to have the tacos we would make at home for family and friends. Nothing more. Then it turned into a business, before we knew it we bought 2 more actual food trucks to keep up with demand. And in 2024 we saved enough financially to open our own restaurant.
