We do a semi-smash. Angus chuck goes onto hot steel and gets pressed — enough to build a dark, crisp edge, not so much that it turns into a chip. The patty stays thicker and juicier than a full smash. American cheese, iceberg, Roma tomato, grilled onion, and a 1000 Island we make here. Nothing is cooked before you order it. No holding drawer, no heat lamp. That's why it takes a few minutes, and it's why it tastes the way it does. The sauces are where we have fun — spicy ketchup made with fresh habaneros, chopped chile and chile güero on anything you want them on. The fries are russets, cut fresh and double-fried every day. Ask for them Jimi style: cheese, grilled onion and 1000 Island over the top. The menu is short on purpose. We'd rather do a few things properly.
