BiangBiang noodles are a specialty from Xi'an, known as the noodle capital of China. They are named after the "BiangBiang" sound made when the hand-pulled noodles slap against the work surface during preparation. However, these two characters do not exist in traditional Chinese writing, so people created a unique character to represent it "A dot flies up to the sky, with bends on both sides of the Yellow River; An open mouth in the shape of a big '8,' with the word 'speech' moving inward, twisting left and right; Long in the west, long in the east, with a 'great king' added in the middle; A heart at the bottom, a moon on the side, leaving a hook for hanging sesame candy; Pushing a cart, it travels in all directions." This poetic description creatively illustrates the unique and complex character used to represent "BiangBiang" noodles. BiangBiang noodles are made entirely by hand, and one of their most notable characteristics is their thickness, resembling a belt. Each noodle is unique, with varying thicknesses.
