MINŌ ("little fish") is Boca Raton's only omakase counter of its kind: ten seats, one chef, nothing rushed. Chef JM Canlas composes each course from what arrived that morning, the same principles a craftsman applies to any trade worth doing right: care over spectacle, restraint over flash, a finished plate that rewards a second look. Reservations are required and prepaid, $195 per person with an optional $95 sake pairing. That structure exists so the counter can plan precisely for ten guests a night rather than turn a room. The sake program is built the same way: relationships with individual Japanese breweries instead of a distributor list, so the selection shifts as those relationships and harvests do rather than sitting static on a shelf. The counter is intimate by design. The room around it isn't: full bar and lounge, open Tuesday through Saturday, walk-in seating, no reservation needed. Small. Precious. Essential.

Ramen Lab Eatery

Welcome to the lab. Ramen Lab Eatery is where South Florida’s ramen story begins. Part science, part soul. Founder Louis Grayson built it as a working ramen laboratory, the first in Boca Raton to make ramen, soba, and udon from scratch every day. Broths simmer for 12 hours, dumplings are hand-wrapped, and sauces come from the same family recipes that started it all. The menu shifts with experiments: five-spice duck ramen from Grandma’s notebook, tonkotsu with thick-cut pork belly, kimchi fries that shouldn’t make sense but do. Guests love the bao buns, the bubble teas, and the room that feels equal parts Tokyo street stall and South Florida chill.
