At Joe's Dining, what really distinguishes us is our passion for a sustainable, local food supply. We started with the goal of offering an unpretentious comfortable atmosphere for locals who demand high quality local food and uncompromising quality of ingredients offered at a fair price. Some local ingredients we use: grass finished NM lamb, bison and Sweetgrass Co-op ground beef; NM grown organic flour, feta, house-made mozzarella, fruits, veggies and much more. Our menu has a wide variety of items from steaks to salads, hamburgers, smoked salmon and more. We cook our savory meats on a fantastic mesquite wood grill. Housed inside Hotel Chimayo de Santa Fe, this bar draws its inspiration from a book called Low 'n Slow: Lowriding in New Mexico. Do not be misguided by the serene, white-washed exterior, for inside lies a trove of lowrider decor, essentially based on the car theme this bar depicts. Its tangerine-colored walls are stippled with steel steering wheels and amusing photographs of an array of cars. Low 'n Slow boasts a stunning line-up of innovative concoctions, each connected to a certain history of a car, each with a story to tell. Think 50 Merc which takes its name from Johnny Tapia’s 1950 Mercury convertible, or First Car, a cosmopolitan made in the memory of Orlando Martinez Jr. who bought his first car in 1983, which, incidentally, was also when the drink came into existence. Their signature Chimayóso Margarita is a favorite among many patrons, and also features in the Santa Fe Margarita Trail.
