Cornbread is one of those foods that pairs well with so many things. It's a natural with chili , barbecue and soul food . It's also super delicious eaten solo, slathered in butter and makes a hearty, satisfying base for Thanksgiving stuffing .

There are tons of cornbread recipes online, and many are handed down through the generations . Because cornbread is such a simple dish (and grandmas rarely cooked using precise measurements), these recipes are often ones that call for a "pinch" or "dash" of this and that.

When I was looking around for a new cornbread recipe to try, I ran across a grandma-approved version that starts with a box of Jiffy mix on the blog Pretty Providence . I was intrigued by the simple recipe and curious to learn more about the story behind it, so I reached out to Jessica Anne Bailey, one of the bloggers.

Bailey explains that the secret to her grandmother 's famous cornbread recipe was a can of creamed corn.

"Grammy Kresge (Sharon Wood Kresge) was half Italian and lived to feed the people she loved," Bailey tells Parade . "She was always hosting, it was always a feast, and the menu varied. She was also a master of turning a box mix into something spectacular when she was short on time, which was what happened with this recipe."

After hearing how this Jiffy Cornbread with Creamed Cornrecipe became a staple at Bailey's family 's table, I decided to try it myself. What Is the Creamed Corn Jiffy Cornbread Trick?

Jiffy cornbread recipes that are making the social media rounds these days rarely follow the boxed recipe, so I'm not surprised by the online popularity of adding creamed corn. Not only does it double the sweet corn flavor, but it pretty much guarantees a moist result. TikTok content creators like @she_is_malik and @oh__carolinaaa use creamed corn, along with other staples like sour cream, butter and sugar. 

Bailey tells Parade that her grandma first shared the recipe when Bailey was collecting easy recipes when she was a newlywed. "I'm not sure when she started making it or how long it has been around, but she taught it to me about 18 years ago," shares Bailey. "I'm pretty confident she made the recipe up. Like many grandmothers, she measured from the heart and liked to play around with things and adapt recipes to her liking, so that was common for her."

The recipe is a popular one on the Pretty Providence blog. Bailey says she's been "blown away" with just how viral this recipe has gone.

"Of course, we know it's good, but the amount of comments we receive in the vein of, 'My whole family loves this; I'll never need another cornbread recipe!' is really fun," she says. "I think it goes to show that home cooks are thrilled when they find a recipe that is super easy to throw together but tastes incredible— something you can serve to family and friends that you know they will love."

Ingredients Needed for This Jiffy Cornbread Recipe

You can get the full and complete recipe on the Pretty Providence site, but to make Grandma Sharon's Jiffy cornbread with creamed corn, you'll need a box of Jiffy Corn Muffin Mix, eggs, milk, oil and a can of creamed corn.  

Side note: You'll definitely want to make Pretty Providence's whipped honey butter too, so you'll also need butter, heavy cream and honey.

How To Make Jiffy Cornbread With Creamed Corn

Making the cornbread is super simple. Just combine all of the ingredients in a large bowl and mix them thoroughly. Pour the mixture into a greased 8-by-8-inch pan and bake in a 350° oven for 20 to 30 minutes. It's done when the top is slightly cracked and golden brown.

This recipe makes a very moist cornbread that's well structured, meaning it's not too limp or too dense. I was skeptical because the batter was very loose, but even with the full cooking time of 30 minutes, it never dried out.

I could have cooked it a bit longer for a more golden top, but I didn't want to push it. I will admit that it seemed under-set initially, but it firmed up after 10 minutes. And it was still tender the next day. 

Bailey mentions that the baking time for the cornbread can vary, so it's important to use a toothpick to test to make sure it's done.

"When I first shared the recipe on our blog I wrote basically what it said on Grandma's recipe card which was, 'Bake as directed but add 5-10 minutes,' but as we've found out from many comments, reviews and our own experience, it can take as little as 30-40 minutes but usually takes about an hour to bake through," she explains.

The creamed corn added a subtle sweetness and a corn-forward taste that wasn't overpowering or too chewy. I made the suggested whipped honey butter (with cinnamon and a dash of salt), and it was the perfect complement.

I have a go-to cornbread recipe that I usually make that includes shredded cheese and diced green chilies , but I think I might have a new go-to. Overall, this is a fantastic way to upgrade a boxed cornbread mix, and I can see why blog readers rave about it. Thanks, Grammy Kresge!
