If you have kids, you already know the food rotation: spaghetti , chicken nuggets , waffles , pancakes , all on repeat until further notice. They love the classics, which is great, but sometimes it feels like I'm cooking on autopilot.

I want quick meals . I want delicious food. I want fun ideas. And I really want something that makes breakfast feel special without turning my kitchen into a full production studio. One recipe that checks all of those boxes? French Toast Lollipops.

My husband sent me a video of the recipe one morning (one of those "this looks ridiculous but also intriguing" ideas), and then I started seeing different versions pop up on social media with fans chiming in with comments like " This is a genius idea !" Gathering what you need for this recipe should be quick. This isn't a specialty-ingredient situation—it's pantry basics doing a little costume change.

To start, you'll need bread. (You'll just be using the crusts, but more on that later.) I used basic sandwich bread, which works beautifully because they roll tightly and hold their shape. Brioche, Texas toast or even gluten-free bread would all get the job done.

You will also need eggs, milk, vanilla extract and cinnamon . (I use ¼ cup of coffee creamer in my French toast recipe instead of milk, and it works great as the sweetener while also adding richness. Any flavor will do!) Finally, to cook the lollipops, you will need butter and bamboo skewers.

Optional extras include jam or fruit spread if you want a filled version, powdered sugar for dusting and maple syrup for drizzling or dipping.

How To Make French Toast Lollipops

While the version of this recipe that my husband sent me seemed fun, when I started looking around at other variations, I found a streamlined version from content creator and YouTuber Winny Hayes that skipped the jam. I thought that would be a simpler way to go, plus I was a little concerned that the jam might burn during cooking. I also used my own French toast batter recipe because I have it memorized.

Start by prepping the bread . To make the roll-ups, you need strips of bread, so you want to trim off the crusts in one continuous piece, leaving a bit of the bread near the crust. If you're adding jam, spread a thin layer along one edge before rolling. Roll each strip into a tight spiral and slide it onto a skewer, making sure that the skewer evenly pokes through every layer (so that the lollipop doesn't fall apart when you cook it).

Next, whisk together the eggs, milk, cinnamon and vanilla in a shallow bowl. Dip each rolled skewer into the egg mixture, turning carefully so the bread gets fully coated.

Melt some butter in a large pan or griddle over medium heat. Lay the skewers flat in the pan. This is where pan size matters. If the sticks hang over the edge, trim them first or use a spatula to gently press the bread flat so it cooks evenly.

Cook, turning slowly, until all sides are golden and slightly crisp. The outside should be lightly browned, while the inside stays soft.

Transfer the French toast lollipops to a plate, dust with powdered sugar if you'd like, and serve with warm syrup or fruit on the side.

French Toast Lollipops: My Honest Thoughts

This is one of those recipes that looks more complicated than it is. In reality, it's just French toast with a little extra shaping. Once the bread is rolled and skewered, everything else is familiar, like soaking the bread in the custard and cooking it in a pan. If you already make French toast on the regular, you can definitely make this recipe.

The taste and texture of the French toast lollipops was exactly what I hoped for. These had crispy edges, soft centers and that classic cinnamon-vanilla flavor. My kids loved that they could hold them, dip them and eat them like treats instead of "breakfast."

The only real challenge was the pan situation. I didn't think about skewer length, and mine stuck out over the edge of the pan, which made flipping awkward. Pressing the lollipops down with a spatula solved it, but next time I'll trim the sticks first or use a griddle.

These French toast lollipops are great for a weekend morning and are fun enough for sleepovers or birthdays. They're simple enough that I'm not dreading cleanup and were a hit with my kiddos (and I enjoyed them, too). I will absolutely make these again!

4 Tips for Making French Toast Lollipops

This is an easy recipe, but here are a few things I learned while making it that might help you when you whip these up in your kitchen.

1. Do some skewer planning

The skewers can affect how the French toast sits in the pan, so if you have a griddle or griddle pan, this is the time to use it. If you're using a standard skillet, use shorter skewers or cut them down before cooking. It'll save you a lot of pan gymnastics.

2. Save the shape

If your rolls start to loosen, press them gently with a spatula during the first minute of cooking. Once they set, they hold their shape well.

3. Use up the bread

If you're not using leftover bread crusts from picky kiddos, you're going to have some squares of bread to use up. The crustless pieces are perfect for making cute tea sandwiches or mini avocado toasts. You can also cut them into pieces and toast them in some oil for DIY croutons or pulse them in the food processor to make breadcrumbs.

4. Love your leftovers

Leftovers keep well in the fridge for a day or two. Reheat them in a skillet or air fryer to bring back the crisp edges. The microwave works, but you'll lose some texture, so keep that in mind.
