Monte-Carlo Beach Goes Organic
Since 2013, Monte-Carlo Beach restaurant Elsa has been awarded Bio (organic) certification by Ecocert, the French leader in organic certification.
Elsa is the first gourmet restaurant in the Provence-Alpes-Côte d’Azur (PACA) region to obtain the highest rated category 3 Organic Certification. The following year in 2014, the restaurant obtained a Michelin Guide star thanks to the talent and the creativity of Executive Chef Paolo Sari and the quality of fresh, local and organic products. Today all five restaurants at Monte-Carlo Beach Hotel (Elsa, Le Deck, La Vigie Lounge & Restaurant, Cabanas and La Pizzeria) use 100% organic fruits and vegetables. Organic products are also available at bars, minibars and delivered by room service.
The spa at Monte-Carlo Beach also offers high-end skincare treatments with Phytomer Cosmetics, exclusive natural formulations that provide a new approach to organic beauty care. Furthermore, the hotel prefers Casanera organic shampoo, shower gel and body lotions amenities that are 100% made in Corsica. The property aims to extend its organic policy through the introduction of other products such as disposable bamboo cutlery and Fairtrade organic coffee produced by the eco-responsible French brand Malongo.
In 2014, Monte-Carlo Beach signed The Relais & Chateaux Vision at UNESCO in Paris. This Vision encourages signatories to carry out a wide range of responsible initiatives including the support of local farmers and fishermen, to protect and promote biodiversity, to encourage responsible fishing, to reduce food waste, to save energy and water, and to provide good working conditions and salaries to employees.
La Route du Gout (The Route of Taste)
Monte-Carlo Beach has collaborated with Chef Paolo Sari for La Route du Gout, a festival of organic gastronomy. Chef Paolo is the only certified organic Michelin star chef in the world. The goal of the festival is to engage everyone – members of the public, children, leaders and institutions – in order to promote ecological initiatives and finance various charitable projects. Thanks to the Bio Chef Global Spirit Association initiated by Chef Paolo Sari, the humanitarian projects of constructing the Moné & Paolo Sari Culinary School of Arts & Hospitality will be completed by October 2018.
For the past three years, the Monte-Carlo Beach has paired children aged between 8 and 13 years old, the Société des Bains de Mer: Executive Chefs and partner restaurants together to create culinary dishes that are served during a prestigious Gala dinner at La Route du Gout Festival held each October.
Children have the opportunity to taste various products and assist chefs in cooking delicate and gastronomical dishes. Together they prepare a thematic organic buffet, which is presented to a professional panel as well as to invited guests. A floating biodynamic vegetable garden covering 300 square meters is specially created for the event at the Marina of Monaco.

World Ocean Day
As part of the World Ocean Day celebrations on June 8th, the Monte-Carlo Beach proposed a “Meet & Greet” with renowned Monegasque fisherman Mr. Eric Rinaldi at the Port Hercule of Monaco. Guests were also invited to gather and enjoy a friendly aperitif with Chef Paolo Sari followed by a gourmet organic lunch at Elsa, the fine dining restaurant.
