According to a new study, a diet rich in green and yellow vegetables can reduce the risk of heart disease. Researchers at Wake Forest University School of Medicine conducted the study using mice that had been bred to develop atherosclerosis(動脈硬化症). Half of the mice were fed a regular diet, while the other half were given a mixture of freeze-dried vegetables. After 16 weeks, the vegetable-eating mice had 38% less build-up of fatty deposits in their arteries.
