写真は、2009年12月1日にルアンパバン県パークウー郡で撮った写真です。 メコン川支流のウー川に沿ったところにある郡です。農家の庭でお米を干していました。高床式家屋の床下は囲われていて中が見えませんが、おそらく中で機織りをしているのでしょう。川沿いの山々は山水画で見かけるような景色です。用途の分からない船が川を遡って行きます。道往く女性が子供を抱っこしていました。風呂敷のようなものを使って子どもを上手に抱っこしています。(続く)【Bon appétit !】 Near Pak Ou the Tham Ting (lower cave) and the Tham Theung (upper cave) are caves overlooking the Mekong River, 25 km to the north of Luang Prabang, Laos. 写真は、2009年、2010年、2014年にビエンチャンで撮った電気バスです。 2009年頃から、ラオス内では電気バスや電気オートバイが目につくようになりました。ラオスに隣接している中国雲南省昆明で作られたものということでした。 日本では全く馴染みのないものでしたので、音が静かなことに驚きました。音のない電気オートバイに気づかす、ひやりとすることがしばしばでした。 当時のうわさでは、昆明では電気自動車以外は街中に乗り入れ禁止になっているという話でした。(続く)【Bon appétit !】 The Government of Laos has issued a new policy to promote electric vehicles which it hopes will help minimize fuel imports and reduce emissions in the country. 写真は、2008年1月上旬にビエンチャンから北に向かって自転車に乗って行った時に見かけた景色です。 道端の歩道上にフランスパン売りがずらりと並んでいます。鶏の上にかぶせる鳥かごや網のようなものを売っている家があります。一斗缶を切って作ったチリトリがあります。バナナが売られています。七輪のうえに大きな鉄なべをおいて虫のようなものを炒っている人がいます。よく見たら、唐辛子でした。(続く)【Bon appétit】 Chopped dried chillies are sprinkled over noodle dishes or added to a recipe to increase its hotness. In jeow bong, the flakes impart a deep red colour. 建物の上で、釣竿を持っている人がいました。よく見ると、竿の先には糸がついています。糸の先には、バッタのようなものがついています。空に向かって釣竿を振っています。バッタを釣っているのでしょうか?しばらく見ていてわかりました。蝙蝠が釣れました。食用にするのでしょう。(続く)【Bon appétit !】 “You know, in Laos, the only flying thing we won’t eat is an airplane.” Laughter, all around. 写真は、2006年から2010年の間に撮ったものです。 ラオスでは、放し飼いになっている家畜たちにしばしば遭遇します。豚や鶏も放し飼いになっていることが多く、どうやって飼い主の下に戻るのか、不思議です。 子供たちが水牛追い等の家畜の世話をしている場面もよく見かけます。家畜がいる田園はとても長閑です。(続く)【Bon appétit !】 Farmers raise animals predominantly by traditional methods, and output per animal is not high in Lao PDR. ラオスの街を歩いていると、カップに蛇が巻き付いているシンボルマークのようなものをよく見かけました。 これは、ギリシア神話に登場する女神の杯だそうです。女神の名前はヒュギエイア(Hygieia)。ギリシャ神話では、健康の維持や衛生を司る神だそうです。 ヒュギエイアの杯は、薬学のシンボルとなっているそうです。ヘビは、脱皮しますので、治癒と再生の意味があるのだそうです。 ラオスでギリシャ神話というのも興味深いですが、このマークを見つけたら、そこには薬局があります。 なお、ヒュギアイアは、英語のhygiene(清潔、衛生)の語源になっているそうです。(続く)【Bon appétit !】 The ‘Rod of Asclepius’ is a serpent-entwined rod and is associated with Asclepius’ attributes as a healer. 写真は、2008年5月24日に、ヴィエンチャン郊外のシマノ村へロケット祭を見に行った時のものです。 先ずは腹ごしらえで、地元の人の家にお邪魔して、カオプンという日本のソーメンのようなものを食べました。カオプンは、日常的に食べているだけでなく、祭りやパーティーでは必ず出てくる一品です。カオプンは、米粉から作られた麺です。これにココナッツミルクベースの汁をかけ、モヤシ、ハーブ、野菜などをたっぷり混ぜて食べます。汁には、肉や魚のすり身などが入っています。カオプンのほかにも、牛肉のラープ、牛肉スープ、カオニャオ(おこわ)などが出てきました。 黄色い色のお酒も出てきました。とても甘く、糯米から作っているとのことです。 ロケット祭が行われている会場の田んぼへ向かいます。村人たちが、スナック菓子のようなものをポリポリ食べています。よく見ると、タガメ、コオロギ、カメムシ、こがね虫を炒ったものでした。(続く)【Bon appétit !】 Khao poon is a popular type of spicy Lao rice vermicelli soup most often made with pounded chicken, fish, or pork and seasoned with common Lao ingredients such as fish sauce, padaek, lime leaves, galangal, garlic, shallots, Lao chillies, and fish mint.(https://en.wikipedia.org/wiki/Khao_poon)

写真は、2010年2月3日に、サワナケートで撮ったものです。 道端で、生のミニ赤貝を売っています。ラオスではポピュラーな貝です。これを短時間茹でて、ほぼ半生のまま食べるのが、ラオスでの一般的な食べ方です。常温流通のラオスで売られている生の貝ですので、食べるのに不安はないのでしょうか?私も、何度か食べていますが、そのたびに勇気を奮い立たせています。(続く)【Bon appétit !】 A train carrying 33 refrigerated containers departs from the Tengjun International Land Port in Kunming, capital of southwest China's Yunnan Province, for Laos, Dec. 4, 2021. ラオスでは、アヒル肉をよく食べます。鶏肉よりも高級肉という扱いになっています。 焼きアヒル肉専門の店先では、アヒル肉をどんどん焼いています。アヒルの生血サラダもあります。 ビエンチャンの空港の近くの麺屋さんでは、アヒル麺(ミーペット)をよく食べました。アヒルの黒砂糖煮が入っていて、とても美味しいです。 メコン川沿いのスナックバーで、店員がアヒルのあご肉を焼いたものを買ってきて出してくれました。アヒルのあごは最も美味しい部位の一つだそうです。 ラオスの人は、庭でパーティーを良く行います。4枚目の写真は、サワナケートで行ったパーティーの時に焼いているアヒル肉です。(続く)【Bon appétit !】 Dishes are generally cooked with fresh ingredients that include vegetables, poultry (chicken, duck), pork, beef and water buffalo. 写真は、2010年2月にルアンパバンで撮ったものです。 市場の前で、道端ネイルサロンを見かけました。女性たちが熱心に爪の手入れをしてもらっています。かなり本格的です。 惣菜をボールに入れて売っている屋台がありました。このような店はあちこちにあり、気に入ったおかずを選べるので重宝します。屋台の八百屋さんもあります。マンゴー、竜眼、ドラゴンフルーツ、ココナッツ、葡萄、リンゴ(輸入品)、タマリンド、野菜などいろいろあります。いろいろな食材があります。豊かな食生活は、ラオスの楽しみです。(続く)【Bon appétit !】 Luang Prabang is well known for its numerous Buddhist temples and monasteries. 写真は、2008年2月にビエンチャン中心部から川沿いに空港へ向かう道で撮った前輪を二輪に改装したオートバイと2010年2月にルアンパバン郊外で撮った耕運機とトラックが合体したような車両です。 自動車などを改造することはラオスでは当たり前ですが、改造車が公道を堂々と走っているのはとてもラオスらしくボーペンニャン(気にしない)です。(続く)【Bon appétit !】 Traffic in Laos is chaotic, and road conditions are very rough. 旧暦12月の満月の頃、タートルアン祭りが三日間ほど行われます。 早朝にタートルアンに行くと、全国から集まった僧侶たちがごろ寝から起きて、一斉にお祈りをしていました。読経をする声が一斉に合わさってとても迫力があります。たくさんの人々も集まっていて、仏塔の前をぐるぐる回っています。集まった人々が、蝋燭、線香などを手にもって仏塔の周りを回っています。境内には、歩けないほど多くの人が列を作ってお布施をしています。何十種類もの民族衣装のパレードなども行われます。境内も街のなかも、たくさんの屋台が出ます。移動遊園地もあります。(続く)【Bon appétit !】 Dating back to the 16th century, the That Luang Buddhist festival is held over three-seven days during the full moon of the twelfth lunar month. 2007年から2010年の3年間私は、ラオスにいました。柱が数本立っているだけの建築物をよく見かけました。見た感じでは、建築途中で放棄された家のようです。あちこちにあるので、不思議に思っていました。 ラオス人に聞くと、放棄されているわけではないとのこと。とは言っても、工事中の資材などは周りに置いていませんので、建築中とは思えない状況です。どうも、家を建てる時には、お金をためてから建てるのではなく、ある程度のお金がたまると、柱を立て、更にお金がたまると屋根を付けるなど、少しずつ建てていくのだそうです。お金は、たまると使ってしまうので、こうして、少しずつでも物に換えておいた方がいいという考えのようです。同僚のラオス人の家を訪問した時には、ドアや窓枠がまだ取り付けられていませんでしたし、内装は手付かずでしたが、もう住んでいました。お金が価値のないものになってしまうかもしれないということも理由の一つのようです。確かに、私の知人も、小金がたまると、ネックレスなどの金製品に替えていました。(続く)【Bon appétit !】 Over the 12 months to September 2022, the national currency, the kip, fell by 62% against the U.S. dollar, while inflation reached 30% year-on-year. メコン川にたくさんの灯籠が流れています。写真は2007年10月25日・26日にビエンチャンで撮ったものです。 2007年10月26日、職場の同僚が、竹で編まれた入れ物に、赤米のおこわをたくさん入れて持って来てくれました。早朝からお寺に行って、喜捨してきたとのことでした。 この日は、雨安居明けの日(オークパンサー)です。早朝から多くの人が、お供え物をもってお寺に出かけています。3か月間の雨安居中は、僧侶たちは寺に籠って修行をし、世俗の人々もお酒を飲まない風習があり結婚式なども行われません。この日を境に結婚式などが頻繁に行われます。夜は、ボート形や丸形の飾りつけをし、ローソクを点けてお祈りしています。また、川に住んでいる龍神への捧げ物としてろうそくで飾られた灯籠やライトアップされた船がメコン川を流れます。(続く)【Bon appétit !】 Boun Ok Phansa marks Buddha's return to earth and signifies the end of Buddhist Lent when after three months of retreat, the monks return to their daily social activities. 写真は、2007年12月15日に、ビエンチャンから北北西に向かって52㎞ほど行ったところにあるモン族の村で撮ったものです。 ちょうど、正月で、多くの人が、様々な民族衣装を着ています。 横一列に並んだ男性陣とその対面にいる横一列に並んだ女性陣の間を、毬が行き来しています。伝統的な求愛の儀式だそうで、好きな異性に毬を投げてその人から毬が戻ってくればカップルが成立するそうです。 なお、モン族の新年は米の収穫後の最初の新月の日から始まるということで、地域によって元旦の日にばらつきがあると聞きました。(続く)【Bon appétit !】 The Hmong people are a sub-ethnic group of the Miao people who originated from Central China. 写真は、2008年12月23日に、ビエンチャンの北100kmほどの所にあるバンビエン近郊で撮ったものです。独特の形状をした石灰石からなる山並みが連なります。 道路わきの家で、杵と臼を使って餅をついている光景を見かけました。ラオスで初めて見かけましたので、庭にお邪魔して、近くで見せていただきました。日本で見かける丸い臼ではなく、細長い四角形の臼です。赤米のもち米を使っていました。蒸かしたもち米を、二人の人が交互につきます。 家の人が、親切にも、バナナの葉に包んだ餅を持って来て我々にプレゼントしてくれました。彼らはモン族で、餅つきはモン族の伝統、餅は正月に欠かせないものだそうです。(続く)【Bon appétit !】 Vang Vieng is a tourist-oriented town in Laos in Vientiane Province about four hours bus ride north of the national capital Vientiane. 写真は、2007年から2010年に、ラオスで撮ったものです。代わり映えしませんが、全て、ぶっかけご飯(カオラットナー)です。 ラオスにいた時、日常的に、いろいろな大皿料理が置いてある食堂へ行っていました。大皿料理の中から好きなおかずを2-3種類選ぶと、ご飯の上におかずを載せて(ぶっかけて)出してくれます。日本ですと、丼飯になるのでしょう。 おかずの種類は10種類以上はありますが、ここにあげた写真を並べてみると、ほとんど同じものを頼んでいたことに気づきました。豆腐の厚揚げ、たけのこ、さつま揚げのようなもの、野菜炒めなどが目につきます。(続く)【Bon appétit !】 Known as khao niao, sticky rice is one of Laos’ national cuisine. 写真は2007年から2010年に、ラオスで撮ったものです。 ラオスに限らず、海外では、日本製に似せた製品をよく見かけます。どう見ても日本製ではないのですが、日本語を入れたり、日本製品と似た名前の電気製品を作ったりと一生懸命です。 Nationalに似た電気炊飯器、HITACHIに似たDVDプレーヤー、日本語を入れた食品の袋、その他日本製に似せたものをあちこちで見かけます。 以前は笑ってすますことができたかもしれませんが、日本の製品が海外で作られるようになり、今や、日本の技術が海外で普及して、日本製品を上回る偽物もできているようです。(続く)【Bon appétit !】 Fake products not only stealing buyer’s hard earning money, but also serious risks to buyer’s safety and health. 写真は、2007年から2010年に、ビエンチャンから国境を越えたタイのノンカイで撮った写真です。 朝起きて、今日の朝食はタイで食べよう思うことがあります。早速、自転車に乗って国境を越え、ノンカイへ行きます。私がいた当時は、今と違って、何回でも国境を行き来することができました。国境での手続きが順調にいけばビエンチャンから1時間10分位でノンカイへ到着します。 ノンカイでは、ノンカイ駅にあるレストランでチャーハンなどを食べることもありますが、ほとんどの場合、ドイツ人が経営しているジャーマン・ベーカリーという店へ行きます。 生ハム、サラミ、チーズ、目玉焼き、野菜、バター、ジャム、パンなどがセットになっている定食を頼みます。ジュースやコーヒーも付いていきます。のんびりと朝食をとり、リラックスしてからビエンチャンへ戻ります。(続く)【Bon appétit !】 Vientiane Capital City and Nong Khai Province lay on either side of the Mekong River that forms the international border between the Lao PDR and Thailand. 写真は、2010年2月3日、サワナケートでの朝食です。 目玉焼きの写真は、カオチー・カイダオです。直訳するとフランスパン・目玉焼きです。この料理は、サワナケートでは朝食の時によく食べましたが、ビエンチャンではあまり見かけませんでした。確信はありませんが、ラオスの南の方の料理なのかもしれません。 食後にアイスコーヒーを頼みました。この店では、コップの上にドリップを載せた珈琲が出てきました。コップには、コンデンスミルクが入っています。ドリップには挽いた珈琲豆とお湯が入っていて、珈琲が下に落ちて行きます。最後にボールに入っている氷を入れて、アイスコーヒーの出来上がりです。(続く)【Bon appétit !】 Coffee is Laos’ fifth largest export product. 写真は、2010年1月12日に、ビエンチャンの郊外で撮ったものです。 お店屋さんの店先にたくさんのビニール袋が下がっています。袋の中は、お店の商品で、食品、お菓子、化粧品、調味料など様々です。 ビニール袋は、このほかにもいろいろな場面で使われます。驚くのは、麺類などの汁ものでもビニール袋に入れてくれることです。また、ご飯やおかずそれぞれ毎にビニール袋に入れてくれますので、ビニール袋の数がいくつにもなります。道端でジュースを購入すると、ジュースをビニール袋にいれてくれます。そのまま飲めるようにストローも付いてきます。(続く)【Bon appétit !】 I started my morning with iced coffee ordering from one of the carts at this market. 小さな女の子が、竹でできた蒸し器の横に座っています。女の子は、七輪に炭をおこし、その上に蒸し器を載せてラオスの主食であるおこわ(カオニャオ)が蒸しあがるのを待っているのです。 レストランでは、カオニャオは竹で作られた小さないおひつに入れられて出てきます。おかず屋台で持ち帰り用に購入した場合は、ビニール袋に入れてくれます。 あるとき、竹筒に入った赤米のカオニャオを食べました。これは、蒸し器は使わず、竹筒に米を入れて竹筒ごと火にかけて炊き上げるとのことです。ココナッツミルクで甘い味付になっていました。(続く)【Bon appétit !】 You take a bamboo basket and put it on a metal or terracotta jar full of boiling water. 写真は、2009年12月31日にビエンチャンで撮ったものです。メコン川沿いの屋台で蒸した魚などを頼んで食べていると、足元に、七輪を持った女性がやってきました。スルメを持っていて、その場であたりめを作ってくれます。この女性は、ベトナム人で、こうして屋台を渡り歩いて、あたりめを焼く行商を行っているとのことで、屋台の人ではありません。 ラオスにいると、ベトナム人の勤勉さが目につきます。ベトナム人が経営しているお店はあちこちにあります。荒物・金物をオートバイに乗せて売りっている人もベトナム人ですし、籐の籠などを売り歩いている人もベトナム人です。(続く)【Bon appétit !】 When Laos was a French protectorate, the French colonial administration brought many Vietnamese people to Laos to work as civil servants. ビエンチャンの中心部にクレープ料理レストランがあります。 写真は、2009年12月14日に撮ったもので、サラダエキゾチックとルアンパバン風クレープです。そば粉から作ったクレープの中に、主食を挟み込みます。ルアンパバン名物のソーセージがクレープの中に挟まっています。 フランスの味とラオスの味が融合していて、とても幸せな気分になりました。 (未確認ですが、このレストランは、今は、営業していない可能性があります。)【Bon appétit !】 The company invested over LAK 10 billion renovating the area in 2009, resulting in its reopening to the public in 2012 as Mix Restaurant, according to KPL. 赤い色のスープでわかりにくいですが、麺の色は中華麺のような黄色です。そこに、餃子が入っています。辛味と酸味が混ざったとても美味しラーメンでミーキャオトムヤムと云います。 白いうどんのような麺は、カオピヤックセンという米粉・タピオカ粉麺です。毎日のように食べる機会があります。鳥スープで、トッピングに鶏肉や豚肉が乗っています。麺の太さやスープのトロトロ度合いは店によって特色があります。 なんとなく半透明の米粉麺は、フ―です。生煮えの牛肉がトッピングのこともあります。あっさりしたスープが特徴です。 このほかにもまだまだたくさんの種類の麵があります。 ラオスで麺類を頼むと、ミントやバジルの香草類、サラダ菜、もやし、ライムがてんこ盛りで付いてきます。これらをお好みで麺に乗せます。(続く)【Bon appétit !】 Khao piak sen is a traditional Lao noodle soup that is commonly served for breakfast. ビィエンチャンの街中を歩いていると黄色やオレンジ、緑色の飲み物を売っている屋台があり、びっくりです。初めて見たときは、色水という感じで、人工的に色を付けた飲物かと思っていしまいました。 写真は、2007年9月6日に、ビエンチャンで撮ったものです。 黄色い色のついた水は、私のお気に入りです。これはトウモロコシのジュースです。スイートコーンの液体を絞り出したような味です。甘みがあり、とても美味しい飲み物です。 豆乳を売っている屋台もあちこちにあります。屋台でジョッキに入っている暖かい豆乳を飲むと幸せを感じます。持ち帰り用に豆乳をビニール袋に入れてもらっている人も多くいます。 色付き水を売っている屋台には、いろいろな色の水があります。緑色の液体は、薬草だそうです。寒天のようなものも入っていてこれも薬草から作られているそうです。ほかの色の水も、どれも自然の果物、根菜類等植物由来の飲物だそうです。(続く)
