Nick 'n' Willy's Pizza is the first of many Boulder-based food places to branch out across the nation in recent years. The very first Nick 'n' Willy's store is located on the far west end of the Pearl Street mall, within convenient walking distance of both free parking and the most popular bars and restaurants on the mall. The pizzeria only serves salads, focaccia sandwiches, desserts, and of course pizza. However, the sheer amount of pizza options, from classics to build-your-own, to unusual combos (like their Roman Feta Pesto pie), mean that there's something for every type of eater. Nick 'n' Willy's original store is quite small and very busy, but the store also offers a take-and-bake option if you call ahead. Whether at home or in store, Nick 'n' Willy's pizzas are a very Boulder twist on an old favorite.
It seems that almost every pizzeria now is using the traditional wood-fired, Neapolitan style of making pies, and this one is no exception. Guests have their choice of white or red pizza; some of the 'bianche' include the 'Quattro Formaggi' (four cheese), the Primavera with asparagus, English Pea, speck (bacon) and egg or the popular 'Mais', which is a masterpiece of raw Prosciutto, sweet corn, crème frâiche and garlic. As for the 'rosso', the Margherita and Marinara are present, but most of the others like the eggplant and zucchini stacked Ortolana, the smoky mozzarella Diavola and the Campagnola with anchovies and garlic are the real winners here.
