The Rusty Onion specializes in hand-crafted pizza and locally brewed beer in Charlotte, NC. Our goal is to be "anything but typical" with exceptional food, service and beer pairings. We source the best possible ingredients and work with farmers and gardens directly. We bake with state-of-the-art equipment and old-world techniques to produce our Modern NY-style pizza pies. Our specialty pizza dough undergoes a 24-hour preferment process, proudly dough'd by hand and cold fermented for 48 hours. Expect impeccable gluten formation, vibrant color, sweeter flavor, and oh-so-easy digestibility.
