I Tried the Viral One Pot Creamy Cajun Chicken Pasta Recipe and It Gives Chili’s a Run for Its Money

I love to eat. I kind of love to cook. But I hate the prep work and certainly hate the clean up afterward. I guess I'm what you might call a lazy cook , or what I like to refer to it as, a convenient cook. 

The less the mess, the less the stress and that is certainly the case for this next dish that came across my timeline. It seems @WhatInTheChef  and myself share the same sentiments when it comes to our cooking methods, what I call convenient he calls, "the lazy way," and either way, its my kind of cooking. His latest cookbook, The Curryculum , is full of easy to cook, one pot meals, and the first of hopefully many that I'm trying out to today is his one-pot creamy cajun chicken  pasta .

Ingredients for One Pot Creamy Cajun Chicken Pasta

To make your own one pot pasta you're going to want to grab a pound of chicken breast, some vegetable oil, salt, black pepper, onion powder, garlic powder, Cajun seasoning, one diced onion, diced bell peppers, some minced garlic, fresh parsley, vegetable stock, heavy cream and your favorite pasta,. In my case I used penne.

How to Make One Pot Creamy Cajun Chicken Pasta

Clean and cut the chicken into 1-inch cubes and season with salt, pepper, onion powder, garlic powder and Cajun seasoning (I use Slap Ya Mama). Sauté the chicken in a bit of vegetable oil over medium heat until fully cooked. Set it aside. In the same pan, cook diced onions, peppers and garlic until fragrant and translucent. Reduce heat to low, add vegetable stock, heavy cream, and noodles and simmer with a lid until the noodles are soft, about 10 minutes. Finally, stir the chicken back in, fold in a generous amount of grated Parmesan and chopped parsley. Serve hot.

What I Thought about the One Pot Creamy Cajun Chicken Pasta

This pasta was quick and simple to make. And for such an easy to prepare pasta, it had plenty of flavor. I was skeptical about only using stock and cream to make the sauce, but it actually tasted great after cooking in the vegetables and topping it with the Parmesan. With a generous amount of seasoning, this dish is actually pretty good and worth making, especially if you have a large group to feed. It's definitely a low effort, high reward pasta, and I'm a fan of it. The only thing that would make this better would be to throw in some shrimp and sausage to the pasta.

My Biggest Tips for Making One Pot Creamy Cajun Chicken Pasta

My only tips for this pasta are to swap the vegetable stock for chicken stock and be sure to add enough of the stock and cream to cook through the pasta.
